Fill the sink with cold water and add your spinach leaves.
Add a dash of salt to bring out any bugs, and rinse plenty of times as the slightest bit if silt can give a very gritty quality to your dish.

Then decide what you want to do with it - the simplest thing you can do is wilt it down and then pulp it into a saag (creamed spinach) dish. Personally I tend to add a little to soups, stews and curries to increase the iron content. If you don't want to make a dish with spinach as the main ingredient, clean and discard the tough stalks and lay on a teatowel to dry out before freezing and using ad-hoc I'd then add it to fresh pasta dough, or use it as a filling for a veggie lasagne / homemade tortellini. The next time I find a load, I'm going to have a go at this - although I've eaten it before I've never made it. It's not for everyone, but great if you like spicy food!

    Hi

For a variation on the yummy ideas above...

I wilt it down in a hot pan with a lid on, some butter and some garlic. It is wonderful. Don't use much water, just that on the leaves after you've roughly washed them will do. Personally I prefer the stalks!!

We also use spinach a lot in salads but agree that can be best with baby spinach, to bulk out a meat lasagne..for potato and spinach curry (the saag a previous poster referred to) .. It's a great vegetable to use.

    Have fun!

Spinach layers in lasange works well. Our favorite is spinach and salmon quiche.
  • Working abroad, on an airline, we used to have the left over spinach ommlettes about 9 am. Never stopped having them since. Wilt the chopped spinach leaves in butter on a hot pan. Frisk up two medium fresh eggs, from the butcher, not them flavourless ones from Mr AsTesBy emporium. When wilted, add eggs, toss and slop on warm plate.

Goes great with baked beans, chunky toast.

Try making pesto with it, chop into little bits, mix with either chopped pine nut/walnuts/toasted breadcrumbs and some grated hard cheese (Italian Parmesan style or a lovely hard goats cheese), add garlic, lemon juice and plenty of olive oil - delish!

Does anybody have any nice spinach recipes that will hide or mask the fact that the spinach is frozen? :o
We love spinach and have always bought fresh but due to finances we bought a bag of frozen. It is awful compared to fresh. :(
