But I have frozen Mr T's fesh spinach, it does go a bit soggier when you cook it but tastes just the same. Hope this helps0 -
This is a bit of a twist on a 'standard lasagne'. It tastes delicious and can be knocked up with 15 minutes preparation time and 30 minutes in the oven:
Lasagne al Forno with Spinach - Serves 6
Preparation time 15 minutes
Cooking time 30 minutes
6 sheets, about 75g (3 oz), quick cook white lasagne or fresh lasagne (I use 'value lasagne')
50g (2 oz) strong cheddar - grated
Ragu and Spinach Sauce
1 tablespoon olive oil
450g (l lb) pork sausage meat (or lean pork mince)
1 red chilli, seeded and finely chopped
2 fat garlic cloves, crushed
150g (5oz) button mushrooms,sliced (I use any mushrooms I have available)
1 x 200ml carton full-fat crème fraiche (I've used half-fat and it turned out fine)
100g (4 oz) baby spinach, roughly chopped (normal spinach is fine. I'm planning to try frozen to cut costs)
salt and freshly ground black pepper
Tomato and Thyme Sauce
1 x 400g can chopped tomatoes
2 tablespoons sun-dried tomato paste (normal tomato paste is also fine)
1 teaspoon Demerara sugar
1 tablespoon fresh thyme leaves (a level tablespoon of dried thyme also works)
Preheat the oven to 200C/fan 180C/Gas 6.
You will need an ovenproof dish about 1.8 litres [3 pints) in capacity, 15 x 25 x 5cm (6x10x2in).
1. For the ragu and spinach sauce, heat the oil in a large non-stick frying pan, then odd the sausagemeat and brown over a high heat until golden, breaking it up with two wooden spoons,
2. Add the chilli, garlic and mushrooms and fry for a few minutes, Stir in the crème fraiche and spinach, bring to the boil for a couple of minutes, season well and set aside.
3. To make the tomato sauce, measure all the ingredients into a jug and season well, Divide the ragu sauce into thirds, and spoon a third into the base of the dish, Spoon a third of the tomato sauce on top at random, and arrange half the pasta sheets over the tomato sauce, Repeat using two more layers each of the ragu and tomato sauces and one of pasta. Sprinkle over the grated cheese.
4. Bake in the preheated oven for about 20-30 minutes or until golden brown, bubbling around the edges, and the pasta is tender,
As this site is all about saving money/budgeting, I've priced it up at Asda:
75g Lasagne - 10p
50g (2 oz) strong cheddar - 25p (£5/kg)
1 tablespoon olive oil - 8p
450g (1 lb) pork sausage meat - £1.12 (or the meat from 1 lb of cheap sausages)
1 red chilli, seeded and finely chopped - 18p (54p per pack)
2 garlic cloves - 4p
150g (5oz) mushrooms - 27p
1 x 200ml carton crème fraiche - 64p
100g (4 oz) frozen spinach - 9p
1 x 400g can chopped tomatoes - 33p
2 tablespoons tomato paste - 5p
1 teaspoon sugar - 2p (?)
1 tablespoon dried thyme 5p (?)
Total Cost = £3.22 (54p per serving)
If you need to stretch the meal to larger portions, just add more layers of lasagne, some cooked red lentils, more frozen spinach, etc.

I've just been to Asda and bought some frozen spinach. I was a bit worried that it would be a huge 1kg 'brick' of the stuff. It is actually frozen as 'pellets'. Each one weighs about 20g, so it looks like it will be quite handy for cooking.

I cooked a lasagne for the freezer. I used up some creme fraiche I had in the fridge. I used Tesco's cheapest sausage meat (frozen - 99p for 454g) and the frozen spinach from Asda. It turned out really well. From now on, frozen spinach will be a regular purchase (a tenth of the price of fresh).0 -
I do chicken and spinach curry, or chicken sag. just fry off cubes of chicken in curry powder, add onion, add spinach and a tin of toms, simmer till thick while cooking rice and/or naan. I bought a HUGE bag of spinach because i really fancied fish pie and there wasn't anything smaller. Now we have had Fish pie, and a Spanish style omlette, but have still got about half a bag left. Any ideas?
How did you manage that? Hi there! I managed to buy a couple of Big bags of spinach for 10p yesterday. I wonder if anyone can think of an easyish recipe using this please?!

You can freeze it as well if you've got lots. I stick handfuls out of the freezer into casseroles and that sort of thing.All shall be well, and all shall be well, and all manner of things shall be well.
