    How about a basic sag aloo.
    Fry an onion and a pound of potatoes chopped into cubes for about 10 minutes.
    Wilt the spinach in a separate pan until it has reduced down - again about 10 minutes depending on the age of the spinach.
    Add the spinach to the onion/potato mix with 1/4 pint of water, some paprika, cumin, coriander, cardamom (anything curryish really) and simmer until the potato is cooked through (about 10 more minutes).
    Makes a very substantial side dish.

    ok i have a few as absolutely love spinach

    1 is abit posh but nice to know for special occasions or if your budget allows it and the others are great pasta dishes my family love them.

    the posh one ill do it as a single serving then just multiply for each person

    1 chicken breast (fresh or defrosted)
    2 cherry tomatoes (sliced)
    handful of spinach
    2 rashers of bacon (i like streaky but works well with normal bacon or pancetta)

    1 cut half way into the chicken breast to create a flap
    2 place spinach and sliced cherry tomatos inside the flap
    3 wrap with the bacon then place in the oven on about 200 for 15-20 minutes until the bacon is crisp and the juices run clear from the chicken

    now for the pasta dishes

    this is really easy
    again adjust for your own servings

    1 handful of tagelitelle
    1 garlic clove
    1/2 tin of chopped tomatoes
    good handful of spinach

    1 cook pasta
    2 whilst pasta is cooking chop or crush garlic and fry them till golden then add tomatoes and simmer gently
    3 when pasta is cooked drain but leave alittle bit of water on the pasta as this naturally thickens the tomato sauce
    4 add pasta and spinach to the tomatoes stir in the serve

    the third is a little more time consuming
    this is a recipe i found ages ago and feeds 4

    350g penne pasta
    300g spinach
    1 tbsp oil
    4 chicken thighs (deboned and skinless cut into strips u can also use breast)
    1 garlic clove (finely chopped)
    425m/3/4 pint semi skimmed milk
    25g plain flour
    25g butter
    140g mature cheddar (grated)
    grated nutmeg to taste (optional)

    1 cook pasta
    2 whilst pasta is cooking, cook chicken and garlic once cooked set aside
    3 add milk to a pan, sprinkle in the flour, then add the butter and whisk over medium heat
    4 once sauce has thickened and is smooth then stir in 85g of the cheese, nutmeg and season to taste
    5 place all cooked ingrediants in a baking tray then add the spinach mix together well
    6 then add remaining cheese on top place in the oven at 200 and cook till golden usually 15 minutes

    I agree. It sounds horrible but so long as you put a few apples through you dont taste the spinach and its a great way to get your greens.

    My family love spinach, baked bean and potato pie- I can guarantee the bowl will be scraped clean. DS wouldn't eat spinach just as a cooked vegetable (and DH wouldn't be keen), but this is v popular.

    Make a cheese sauce and add cooked (or defrosted frozen) chopped spinach and nutmeg to taste. Put at bottom of an ovenproof dish (I use a fairly deep pyrex one).
    Cover with baked beans- 1 or 2 cans depending on size of family.
    Top with mashed potato. Sprinkle that with a little cheese and bake in moderate oven (180 C) until potato golden and beans and sauce bubbling, about 30 minutes.

    I've modified this in the past and made a lasagne, omitting the potato and also baked a potato each and then used the spinach/cheese sauce and beans on top of that.

    Creamed Spinach

    Soften spinach in 3 tbsp butter.
    Sprinkle on 1 tbsp flour.
    Stir well and gradually add a bout 4 fl oz of milk or cream.
    Cook till thick.
    Season with salt, pepper and nutmeg.

    Serve as a side dish to plainly cooked fish or chicken.
    To make it a veggie main dish add grated cheese (blue would be good or maybe gruyere) and serve with crusty bread.

    You could make a quiche/frittata with some sauteed spinach (I'd cook it in butter with some garlic for the best flavour), leek/onion and grated cheese? This is great because spinach cooks down so much that you can use plenty up in one go! Or make a nice curry with some veg (I really like squash/pumpkin) and meat if you've got any.

    spinach soup. Fry an onion in a little butter or olive oil till soft. add 3-4 peeled chopped potatoes, cook for a couple of mins, add stock (1-1.5litres) then when potatoes nearly cooked add the spinach leaves, simmer for a couple of mins till cooked then blitz. Very tasty. Ingredients are fairly flexible, more potato if you want it thicker, more stock if you want it thinner.

    Egg florentine - wilt spinach, I usually add a bit of onion as well, top with poached egg, cover with grated cheese and pop under the grill. Great on it's own as a lunch dish or with potato wedges for tea.
