  • Try layering it with fried onions,tomatoes and cheese, finishing with cheese on top. Shove in an oven till top has browned niicely. Mmm..
  • Blanch the spinach for a minute in boiling salted water. Drain and rinse in cold water. Squeeze handfuls of spinach to remove water, then loosen up the bundles.

    Heat some olive oil in a pan, add some minced garlic. Stir-fry for 30 seconds or so (don't let it get brown or it will taste burnt). Add in the spinach and mix it all up to coat the spinach with the garlicky olive oil. When it's hot, it's ready. Spinach shrinks down an incredible amount when cooked, so you won't have a problem finishing it up this way.

    I do a spinach and stilton plait..
    get some puff pastry cut a rectangle, then layer on spinach and cheese then take bits of pastry and make the plait over the top, put in the oven, when the pastry has "puffed" and is golden brown its done and yummy!

    here's a traditional turkish one: fry some onion till soft, add a little garlic, then turn up the heat and brown some mince. add tinned tomatoes and/or tomato paste - just like the beginnings of spag bol sauce.

    wilt the spinach, and add it to the sauce. season to taste, serve with a dollop of greek (turkish) yoghurt.

    i like it best with mashed potato, but rice goes well too.

    Wilt the spinach by pouring boiling water over it then squeeze out as much water as possible. Cook a couple of portabello or big field mushrooms in a covered pan, stuff with the spinach then top with either breadcrumbs and cheese or for a really filling meal make up a packet of couscous - Ainsley's sunset flavour is good and top with that, crumble feta cheese over, cover and cook untill the cheese is melted. Delicious served with sweet potato chips - quick too!
  • I make spinach and potato soup which is really simple. fry an onion in some oil till soft, add a couple of diced potatos, and cook for another minute or two. Add stock. Add spinach. Cook till potatos are soft and whizz up.

    Only drawback is that it doesn't freeze well, the potatos go all gloopy.
  • using spinach as a topping on a lasagne...wash the spinach and place in a microwaveable bowl..cook in the mic for a couple of minutes until wilted..layer on top of a lasagne before putting the last layer of cheese or white sauce..top with some cheese...scrummy :santa2:

    I've been Money Tipped!
    Just made a saag-aloo type thing; fried garlic, wilted spinach leaves in microwave then added them with parboiled diced potatoes, 2 teaspoons curry paste, bit of water ... delicious accompaniment to our chicken curry!
