I make little spinach and cheese tarts, similar to what lynzpower posted. I often make bread cases rather than pastry though - a good way to use up bread about to go off (basically just flatten it out with a good squish and line the case, bake blind very briefly, fill and cook). Doesn't sound that great, but actually works well.They deem him their worst enemy who tells them the truth. -- Plato0

I like to buy a bag of spinach for going in sandwiches but it never all gets used up, does anyone have any ideas for recipes using about half a bag (we're veggies btw). I used to make a quick version of eggs florentine but have lost that recipe!

I love spinach in a curry (chickpea/spinach, potato/spinach, chicken/spinach or general "veggie including spinach"!) or a pasta sauce, and also find that it freezes very well - I'm sure that you're supposed to blanche it or something, but I just stick it in the freezer as is and then add it into the sauce as it is cooking with no ill effects on the quality (:rolleyes:!), so personally I would just freeze any excess and stick it into my next sauce as and when required.
Sorry, not very exciting, but it does use it up with minimum fuss/effort!

cook quickly and briefly in a little olive oil, add 2 or 3 beaten eggs = spinach omlette, serve with sliced tomatoes with a basalmic vinegar dressing.
or if you have some good chicken stock make a quick soup with this stock, diced potatoes and finely sliced leeks,, cook for 30 mins or so, just before its finished cooking add finely chopped spinach and cook for 2 mins serve with crusty bread or garlic bread."The purpose of Life is to spread and create Happiness" :j0 -
hi if you like salmon this is a good one
place the spinach in the bottom of a oven proof dish
next place a layer a leeks pre boiled for 5 mins to soften
then salmon steaks rubbed with a mixture of 1 garlic and teasp of ginger mixed with olive oil
stick in oven approx 25 mins or untill salmon cooked to your liking
oven temp 200/180
