    hi, i was just wandering if anybody could point me in the right direction for any cheap soup recipes that i can use and freeze. im trying to cut down on spending and waste and am going to try and make a couple of soups a week for lunch/supper.

    i have quite basic culinary skills so any help and advice would be welcome. the easier the better!!

    I just use veg & herbs & stock. I made a nice carrot soup, but use whatever veg you have. You could roast whatever veg first to give a good flavour soup too.

    1. Fry chopped onion in a bit of butter,then add 2 sticks of celery (for flavour) and as many carrots as you like, add herbs eg. coriander and perhaps some chilli if you like it hot, put a lid on and sweat the veg for about 5 - 10 mins.
    2. Add 1 litre of stock and bring to the boil and then simmer for 30 mins.
    3. Liquidise with a stick blender or in a blender.
    4. Add a glass of milk if it needs thinning near the end.

    My favourites are these 2 but I rarely use the broad beans in the first as they are quite pricy unless in season, just chuck some peas in.

    We have soup every weekend. The easiest way to do it is to add chopped vegetables to simmering stock. Cook until tender. You can then liquidise or leave as a Hearty Soup ;)

    Thanks - have a bag of frozen broad beans and didn't know what else to do with them ;)

  • i too just use any veg we have and even used a bag of mixed frozen veg which we didnt like in a soup when we had visitors and needed lots of soup no-one noticed not even husband who particularly hated it!!

    i usually chop an onion and soften in small amount butter and then add 3 chopped carrots, a large diced potato, some brocoli (even save stalks ready for soup) and any other vegies we have lurking sometimes sweet potato as that helps thicken it, then add 2 pints of stock (i use stock cubes and use any flavour not fussy)

    simmer it for about 30mins then i blend it until smooth.
  • Really quick and really simple

    Boil 2 chopped carrots and 2 chopped Parsnips in 1 pint of veg stock for 20 mins. Puree in blender....Instant Carrot and Parsnip soup!!!! Freezes well....and you can vary it to make anything you want!!

    On holiday we had a very posh meal in a French restaurant.

    The soup was cauliflower and honey, it was devine.

    I've googled it, I've found lots of curried cauliflower soups, but this was a cream of cauliflower soup & honey (& maybe some other things, but I remember the honey in the title).

    Does anyone have a recipe for this, or know where I might find one?
