    Well, I made my first ever soup last night after finally buying a blender with some vouchers I had, so thought I would share!

    It came out really well (if I do say so myself!) and was lovely and filling. I am a homemade soup convert!

    Roasted Vegetable Soup - this served 2 people (me and DH) with large bowls or could serve 4 people with smaller bowls.

    Half a large aubergine
    One white potato
    One sweet potato
    One large parsnip
    One large carrot
    One courgette
    One clove of garlic
    One vegetable stock cube

    Preheat the oven to 200 degrees.

    Put two table-spoons of olive oil in a roasting tin, together with a few sprigs of rosemary and a handfull of sage. I used dried herbs so put a handful each of rosemary and sage in.

    Chop the vegetables into bite-size pieces, skin the garlic and leave whole. Put them all in the roasting tin and make sure all the vegetables are coated in the oil and herbs.

    Put into the oven and leave for 30-40 minutes or until the vegetables are tender. I stirred them round now and again to make sure they cooked evenly.

    Make up the vegetable stock using one pint of boiling water.

    Remove the vegetables and put them into a large saucepan, covering them with the stock. Bring to the boil and then simmer for 5 minutes.

    Leave to cool, blend half the mixture and then return that to the saucepan to the other half of the vegetables.

    Reheat and serve with crust bread.

    Its real hearty food and I'm definitely making this for the party on Saturday, I'm sure people will like it :D

    hi everyone

    i made a new root vegetable soup at the weekend which was declicious - basically, make a root veg soup as usual (carrot, swede, squash, turnip, potato, parsnip etc) but keep some of the veg back (quarter to a third) and fry in a little butter until softening, then add honey (about a spoon for every 4 portions), cook for a further 6-8 mins to caramelise.
    blend the main soup and add the caramelised veggies into it so that you have a smooth soup with caramelised chunks in it. yummy! especially nice with plenty of pepper in it, for the contrast with the honey.

    also, another super cheap, very quick staple (sorry, can't find the recipe so this is rough estimate):
    4 oz red lentils
    1 onion, finely chopped
    1 clove garlic
    some chilli if you like it
    teaspoon cumin seeds
    1lb passata (or a tin of tomatoes)
    i normally then throw in another tin of tomatoes becuase i pefer it that way!
    some oil
    1 pint veg stock

    soften the onionand garlic in the oil for 5mins with the cumin seeds (and chilli if you want it), add the lentils, cook for another 2-3 mins. add the stock, simmer for 15 mins. add the tomatoes, simmer for 30 mins. blend if you want - yummy, dead cheap and really filling :D

    I'll have to try that root vegetable one, sounds yummy!

    The lentil recipe sounds really easy - I'll give it a go although I'll leave out the chilli as DH has an aversion to anything remotely spicey (as in hot) lol

    Hi

    In an effort to eat healthier and save money, I have started making Soup. So far made the following and both vert tasty and filing:

    Pasnip, Potatoes, Onions, Carrot and an apple
    Just fried onion with garlic, added veges and stock, simmered for 20 mins or until veg soft, added some milk, mild curry powder blended with hand blender and Vola!

    Very tasty and cheap with Sainsburys 50p parsnips and carrots at the mo.

    Tonight I made:

    Brocolli and Cauliflower (1kg bag from frozen aisle, about £1.10)
    Potatoe
    same method as above but intead of curry powder added grated Chedder Cheese.

    Delicious..

    Anyone have any other ideas?

    sweat a onion and diced potato in a little oil add four handfulls of frozen peas some water and a stock cube simmer till potato is cooked puree with a blender and stir in either chopped mint or 1/2 tsp mint sauce delicous as is or even better with a spoonfull of yoghurt or creme fraiche

    If anyone likes Mushroom soup the you'll find a simple recipe on the packs of Asda frozen mushrooms. I didn't buy them so I can't post it.
    Nevermind the dog, beware of the kids!
  • After Christmas day I had a little leftover veg (brocolli, & carrots that I had cooked in orange juice) about 3 desert spoons of each. Trying to cut back on throwing out leftovers I put them in a pot with 3 veg OXO cubes and some water and boiled them up after that zapped them with the hand blender. Result a really fab tasting soup thats virtually calorie free and had a 'cream of' consistancy.

    Would be keen to try Mushroom soup if anyone has a recipe. I guess it could would out expensive so will have to look out for the yellow stickers..
