    BOILED HAM plus PEA & HAM SOUP

    If you are going to boil a ham joint, why not make some pea & ham soup as well.

    For 2 servings of soup

    INGREDIENTS
    1 ham joint
    500ml of water
    125g of peas
    Ground black pepper to taste

    METHOD
    Rinse the ham in cold water, then soak the ham in cold water for at least 6 hours, changing the water once or twice if it is very salty, or according to any cooking instructions. If you are using dried peas, soak them in water according to the instructions.

    Put the ham into a large saucepan and cover with fresh water. If you are using soaked dried peas, add them now. Bring to the boil, then turn down the heat until it is just boiling (simmering).

    Put the lid on the saucepan and cook according to the cooking instructions on the ham. Remove any salty white scum, which will probably form on the surface of the water. Check the liquid level from time to time and top up if it starts to dry out.

    Remove the ham. Adjust the quantity of the liquid to the required quantity of soup.

    If you are using fresh, frozen or tinned peas, add them now. Continue cooking the peas until they are the desired consistency.

    If you have a food processor, put the soup in it and blend it to the desired consistency. If you have a hand blender, put it in the soup and blend it to the desired consistency. If you don’t have a food processor or hand blender, use a potato masher, press the soup through a sieve with the back of a spoon, or leave it lumpy.

    Season with the pepper. Continue to cook for another couple of minutes.
    ADDITIONS & ALTERNATIVES
    You can use dried, fresh, frozen or tinned peas. However, dried peas have to be soaked in advance.

    Pea soup can be any consistency from a thin liquid with soft peas floating in it to a thick paste you can stand a spoon up in.

    Shred some of the ham and add it to the soup before serving.
    Omit the ham and make pea soup.

    i would like to start making my own soups, but i'm unsure where to start.
    does anyone have a easy recipie for leek and potato soup, the ones i have found all have cream in and i'm unsure about frezzing anything with cream in. and a french onion soup.

    There is no reason why you can't freeze soup with cream in.

    If you don't like cream in your leek and potato soup then leave it out -replace with more stock or milk.
  • i'm no expert but my soup recipes are pretty easy and always go down well :)

    dice potatoes and boil, add the sliced leeks midway thru.. once cooked drain off a bit of the water then I add seasoning a veg stock cube and a quick blitz with a hand blender (longer if you want a smooth soup)

    I also do a broccoli one..

    (can add diced potatoes to this too) boil your broccoli, drain off some liquid and blitz.. add stock cube and seasoning then add chunks of cheese, stir in until it melts

    *keep liquid you drain off incase you need to re add if its too thick

    sorry cant add amounts or volumes etc as just judge it as you go along or go off how far its got to stretch :)

    I make quite a lot of home made soup & use the Covent Garden book - your local library may have a copy so you can try it out. Otherwise if you don't want to use cream I usually substitute low fat creme fraiche instead.

    Leek & potato soup

    3 leeks- cleaned & chopped
    2 large potatoes peeled and chopped
    1 3/4 pints(875ml) vegetable stock

    Simmer vegetables in stock until tender, then blend. Yum

    I find that adding potato makes a soup creamy without adding milk or cream. I make celery soup by boiling potato in vegetable stock and halfway through add the celery. Leave to cool, then blend. You need to let it cool otherwise you'll end up with hot soup all over you and your kitchen.
    The vegetable stock that I use is Marigold Swiss Vegetable Bouillon powder, as recommended by a friend who had been a vegetarian for 50 years.

    Lentil soup

    Fry one onion sliced and diced
    Two carrots chopped
    2 glarlic cloves crushed
    2 handfuls of lentils
    salt / pepper
    2 pints water or stock

    Fry onons, garic till soft add carrots and about 2 pints of water boil till sidred cinstency about half hour we like ours thick.
