    This site has some really easy to follow recipes with "normal" ingredients. Very tasty!

    Last night's tomato soup

    We didn't have any onions, so it was a home-style recipe

    I chopped 1 yellow pepper, 1 red pepper and 4 celery sticks. Softened them in olive oil, added italian herbs and garlic. When they were soft, I added a tin of chopped tomatoes, plenty of vegetable stock and a big squidge of tomato paste. I cooked it for about 15 minutes. Next I skinned some cherry tomatoes, chopped them up and tipped them in. Added a drained can of butter beans, plenty of salt and pepper. It took another 10 minutes, then I whizzed it with my stick blender. Served with a dollop of creme fraiche.

    It was a good soup: fresh tasting rather than sweet, lots of hidden veg, and the beans both thickened it and added some protein. We upped the protein by eating it with cheese muffins (an odd recipe which didn't have any oil in it, but it came out ok).

    My other soup triumph recently has been miso soup.

    I cook some soba noodles and then refresh them. I put them in the bottom of a big bowl with some shredded wakame (seaweed - optional!) and some cubes of tofu. In another pan I mix: about 500ml veg stock, 1-2 tbsp miso paste (I use brown rice miso), 1 tbsp shoyu sauce and 1 tbsp mirin. I also add a handful of sliced shi*take mushrooms. I let it bubble for about 10 minutes, then pour it over the noodles (these two tasks of course really go on at the same time, so the noodles are still warm).

    Yummy on a day when you're feeling hormonal and need that umami feel in your mouth.

    LEEK & POTATO SOUP

    Serves 2

    INGREDIENTS

    250g of leek
    250g of potato
    1 tablespoon of oil
    400ml of water
    1 vegetable stock cube
    ¼ of a teaspoon of ground pepper
    100ml of milk

    I made this yesterday, even up the milk to water ratio and throw in a small parsnip makes it extra nice.

    Those plastic takeaway boxes are OK - the small ones are 500ml, so can take 2 x 250ml portions. The plastic, especially the lids, can get brittle when frozen though. I am looking for some freezable and microwavable 250ml round bowls.

    I cook for other people sometimes and found these containers to use for soups. They are the size and shape you are after, currently cost £5.99 for 50 (plus postage), or if you REALLY want a lot, you can get 250 for £20.99, cutting the cost of each one by quite a bit.     Hi all
    Not sure if this is in the correct place

    Just made this soup with fridge leftovers I have to say it's really good in my humble opinion so thought I would share it

    1 leek (finely chopped)
    1 large potato (cubed)
    approx 25g butter
    1 small onion (finely chopped)
    8fl oz milk
    1 pint veg stock

    Melt butter
    add veg
    sweat with lid on for 15 mins

    add stock & milk
    Simmer for 15 mins

    Add salt & pepper to taste
    Blitz in blender (I used my smoothie maker once it had cooled a bit as I don't have a blender)

    I also had a little cream left in fridge which I swirled on top
    Super cheap & tasty plenty for 2 people

  • Was prompted to start this by soup making at weekend. I have a tupperware I keep in the freezer that's labelled 'soup mix.' In there I throw everything that's left over at end of week, e.g. bit of carrot, quarter of onion etc. That box gets topped up every week until it's full and then the contents added to a 'bulker,' this weekend was 32p packet of dried marrowfat peas that I soaked overnight. Added box contents, peas, two veggie stock cubes and some water. Ended up with fab tasting soup - 4 large portions, now labelled and frozen, prob cost less than 60p in total. Sometimes I add lentils or split peas to the box contents. Made me think, has anyone else got a cheapo soup recipe that tastes good?

    My Monday lunches at work during the colder months are always Sunday Lunch soup! My colleagues at work are always very jealous.
  • Oooh, I've got a couple of Birds Eye roast dinners in the freezer that friend gave me when she cleaned out her fridge prior to emigrating last month. Didn't fancy them as meals and was wondering whether to jsut chuck them out (but sooooo against the grain), what do you do, just add stock and blitz?
