  • Bacon and tomato soup - amazingly delicious for those who don't like soups too bland - you don't need a lot of bacon to give a great taste, fry chopped onion and bacon with a bit of garlic, add tinned toms or fresh if you've been growing your own, chicken stock, cook 20-30 mins, puree and reheat with a glug of sherry or cream for extra yumminess. I've never met anyone who didn't like it.
    Apart from vegetarians or Muslims, of course. I have a lot of both in my family/circle of friends, but they get leek and potato soup, or onion and potato soup if I'm feeling poor.
  • I fried some sliced onion in a little butter, added some left over califlower cheese and some stock, simmered for 10 min, blitzed and ate for lunch with a slice of HM bread. Before I joined Old Style I prob would have binned it. Therefore its a free meal.

    Hi everyone,

    I'm really trying to cook from stratch more however i'm a dreadful cook lol my oh and ds just hate my cooking and now its a bit of a joke in the house :rolleyes: but i'm really trying to get better. i've been thinking that with ds starting school in a few weeks i'm going to be having lunch alone. I want to make a soup that I can batch freeze so i'll have a nice :eek:warm lunch. Has anyone got any fool proof soup recipes that I can try. it really has to be easy to make.
    I'm trying so hard to be thrifty, but it doesn't come naturally. You lot are an inspiration!

    The greatest thing I find about soup is anything goes, you really don't need to measure much and its all done my guess work! (well mines is anyway) I just get a basic stock (2 stock cubes of any flavour) and cut up various veg (usually onion, turnip, tattie, carrot, leek) and bung it all in. If it looks too much veg I add more water, if its too watery I add more potato! Merge it all up and voila!

    Lentil is pretty easy too, if you put too many lentils in you get a really thick soup and if you don't put enough in well its a nice thin soup.

  • ok this never ever ever fails

    serves 2 generously (sp)

    3 large potatoes
    3 carrots
    2 onions
    stock chicken or veg
    drop of oil
    ground cumin & turmeric

    chop veg into small pieces, add oil & onion to pan and a drop of the stock, put the lid on and leave for 5 mins, take off lid add the potatoes and carrots, stur, add enough stock to cover, add the cumin and turmeric, as little or as much as you like, stir, put lid back on, leave for 20-30 mins and then enjoy :)

    leek and potato is easy too same as above except 2 leeks and an extra spud. leave out the cumin & turmeric, and carrot & onion

    Get an appropriate sized saucepan and dice half a pan of potato, carrot, onion, celery, turnip, swede, whatever you have. Fry onion for a couple of minutes in a little oil, stir in other veg and cover with water. Season with salt and pepper. In about fifteen minutes, try and adjust seasoning if needed. Check potato is cooked and then stir in a dessert spoonful of pesto and chopped herbs and a few frozen peas. Peasant food but my favourite soup to eat with garlic bread.

    I made some yesterday and it was just 2/3 potatoes, 5 carrots, an onion, stock made from 2 stock cubes (about 2 pints) and a pinch of chilli flakes. I did it in the slow cooker, but could be done in a pan. Once cooked, I blended it all.

    My favourite is one I found in (I think) an Asda magazine. It's carrot and butterbean and is lovely.
    Carrot and butter bean soup with pesto
    1 onion, diced
    1 tablespoon olive oil
    400g (13oz) cooked carrots
    25g (1oz) plain flour
    500ml stock – chicken/turkey/vegetable
    2 x 410g tin butter beans
    4 teaspoons pesto
    • Gently cook the diced onion with the olive oil for four minutes. Add the carrots and flour and mix in to absorb the excess oil.
    • Remove from the heat and slowly pour in the stock stirring frequently, then return to the heat and bring to a simmer for five minutes. Add the drained butter beans and simmer for a further five minutes.
    • Top each bowl of soup with a teaspoon of pesto.
    I only use 1 tin of butter beans and I blend the soup. I also don't add pesto. Also (sorry forgot!) I add more stock/water as well as once it's blended it goes much thicker, so I suppose it depends how you like it.

    That 'Carrot and Butterbean' is one of my faves :drool:.


    I knew there was a very easy recipe for tomato soup using tinned tomatoes - so I've been googling and come up with this one:

    Oooh that tomato one sounds nice and simple. I'll add it to my favourites and try that one day.
