I made leek ,onion and potato soup today ,I didnt add cream or milk ,just salt pepper and a dash of worcester sauce and simmered for a long time0

just reminds me i made hm cheesea and onion bread 2day was gonna make soup but hubby said he will buy some , as we are snow in (just carnt use car) i agreed but was completly shocked when he come home at sais it was only £2.50 for 4 soups , was livid could make free as all the ingredintes, probley would have done 4 people for a £1 , well worth making0

Sorry I do not have exact amount I find with soup it is an excellent way to use up vegetables that you have in the home.
carrot and coriander soup.- About 10 medium size carrots diced
- 1 onion diced
- about 2 pints of chicken/ or vegetable stock.
- good pinch of dried coriander
- salt and pepper to your own taste.
- cook the carrots and onions in the stock.
- When carrots and onion are nice and soft blend to a smooth consistency.
- Add coriander and stir into the soup
- add salt and pepper to your own taste.
Another simple soup for a beginner at making homemade soup is pumpkin soup.
Roast pumpkin soup- 1 medium size pumpkin
- 1 -2 onions
- little olive oil /vegetable oil for roasting or spray oil
- about 2 pints or more if I want to make it last a little longer (vegetable or chicken)
- salt and pepper to taste
- peel and deseed the pumpkin roughly chop into smallish pieces.
- peel the onion and chop roughly
- place pumpkin on roast tin
- spray with oil or drizzle with a small amount of olive oil or vegetable oil
- roast the pumpkin and onion until cooked.
- Add pumpkin and onion to stock
- blend pumpkin / onion and stock to a smooth consistency
- add salt and pepper to taste

I love that pumpkin soup recipe.
Why not freeze the soup as it is and then add a swirl of cream at the table? We also do this with greek yoghurt, which is slightly healthier.0 -

I do a Carrot and Butterbean Soup (had the inspiration after trying the gorgeous Baxter's version).
I 'sweat' the sliced carrots, diced onion, butterbeans (pre-soaked and cooked - so left-overs are good for this) and a diced potato for about 10mins (till the onions are going transparent). Then cover with stock (chicken or vegetable), throw in a handful of lentils, optional is some chopped fresh coriander if you have some or a shake of ground, some dried mixed herbs, bring to the boil and simmer till the carrots are cooked. Allow to cool and then blitz/whizzie - in small batches if necessary. Check for seasoning.0 -

or make stock from carcess (if not uses stock cube) large pan, knob of butter, fry onion or leek, chuck in chopped carrots, swede ,pots, chic, stock boil til soft, serve chunky or whizz in blender.
or roast a load of veg in oven with some herbs, whizz up add to pan of stock and chopped chic.xOne day I will live in a cabin in the woods0 -
French Onion is quite easy.
Slice plenty of onions thinly (about a pound or whatever)
Fry in a little oil very slowly in a heavy saucepan until a lovely golden brown.
when ready add a couple of pints of well flavoured stock - chicken is probably best - simmer for a few minutes and season to taste.
Toast a slice of french bread for each serving and sprinkle with grated cheese, place a slice in the bottom of a soup bowl and ladle the soup over. The hot soup melts the cheese.

I am getting on quite well with this soup making experiment lark, they have all been yummy so far and have frozen really well but now i have a question!
How can i make a veg soup that is more like a thin broth type?i make chicken noodle soup which is the consistency i am after for the veg soup, ie stock with bits of veg , not blended.every time i try to make it like this either the veg bits turn to mush or it doesn't really taste of very much.
Any ideas?0
