    ive cooked Delia's recipe several times and all have enjoyed. What I would say is that it is quite sweet so may want to add a bit of extra kick if want something more spice - go to Delia online and look in recipes for Curried Parsnip and Apple Soup - be quicker for you to look on her site than try to read my typewritten instructions

  • I'd try a few dried chilli flakes - they keep for a little while in a sealed jar/packet and no painful and unfortunate eye rubbing accidents etc!!

  • I tried this recipe out on some friends the other day and they all really enjoyed it. If you have the oven on for something else you can roast the pots/onions in advance and add cold to the stock and heat thoroughly.
    (I used fresh stock cos we had some - but a chicken stock cube made up would be fine)

    Spicy Roast Sweet Potato Soup

    3 Sweet Potatoes
    1 large Red Onion
    2 tspns olive oil
    1 Red Chilli
    2 Cloves garlic
    1” fresh Ginger
    1 tspn Ground Cumin
    1 tspn Ground Coriander
    1 pint fresh Chicken Stock
    Milk or water to taste

    Cut the potatoes and the red onions into chunks and place in a roasting dish and coat with the olive oil, ground cumin and ground coriander. Place in the oven at around 200 degrees.
    Meanwhile chop the garlic, chilli and ginger quite finely. After 10 – 15 minutes, add to the sweet potatoes and mix round. Return to the oven and roast til the potatoes and onions are soft and have taken on some colour - probably another 10 - 15 minutes.
    Warm the stock in a large pan and tip in the hot roast veg. Bring to the boil and simmer for 5 minutes.
    Leave to cool a bit and blitz to a smooth consistency. Add water or milk until it's the thickness you want.

    We had it with crème fraiche or soured cream and baked tortilla strips.

    Is there a quick way of searching this thread rather than go through every page :eek:

    I want 2 soup recipes, one for tomato, and one for mushroom :D

    Hi all,
    i made a lovely warming soup yesterday so i thought that i would share the recipe.
    Turkeyless turkey & vegetable soup
    1 turkey leg
    4 carrots
    3 medium sized potatoes
    2 parsnips
    6 onions (small)
    3 sticks of celery
    2 Vegetable oxos
    2 bay leaves
    1 mug of pearl barley (rinsed well)
    Black pepper (few twists)
    1 teaspoon oregano
    1 teaspoon marjoram
    4 pints of water
    Chop all the veg into small pieces and mix together all the ingredients,
    Put it all in the slow cooker ( i have a MR 6.5 litre one)
    Sit the turkey leg on top and dissolve the oxo`s in the water and then pour over the veg.
    Leave for as long as it takes for the turkey to cook ( i fell asleep and it was on high for 4 hours and low for about ten:eek: )
    Take the turkey leg and the bay leaves out and blitz the soup until thick and smooth adding more water if you like it thinner.
    This soup is fab and doesn`t need any of the turkey adding at all - i used it to make the fake duck recipe.
    The water in my sc may have evaporated down as it was on for so long so i didn`t need to add any extra at all. It can be easily made in a large pan but you will need to chop the turkey leg up to fit it all in.
    Hope someone tries it and enjoys it as much as we did.
