Split the leeks into 2 parts, one for each of these soups
1. Red Soup: Sweat leeks and red onion in a little oil. Add the chopped tomatoes and cover with stock. Simmer until the vegetables are soft. Season and add herbs. Blend using a hand blender.
2. Orange soup: sweat the leeks and a yellow onion in a little oil. Add the chopped sweet potato, carrot and squash. Proceed as before

I'm the proud owner of the laziest soup recipe ever!
Blend an tin of tomatoes with a tin of baked beans, add some pepper, worcestershire sauce or whatever you fancy. Heat up and Bob's your uncle.

Soups and casseroles are the easiest things to cook. You just put some veg and/or meat in a pan, add some liquid (water, stock, wine, beer), salt, pepper and herbs and cook until soft.
Taste it every now and then to check if it needs more seasoning. For example, I've found that leek and potato soup needs loads of salt because the potatoes suck up the salt.
The soup recipe that I posted earlier in the thread, when I first made it, I found it was lacking *something*, a creaminess. It didn't have the coconut milk in the first time, but once I added the coconut milk, it worked.

This is my Grannies recipe for chicken soup
1/2 cup of dried peas
1/2 cup of barley
steep in water overnight
simmer chicken in 3 litres of water for 1 hour
add 1 tablespoon of knorr chicken powder
add 1 teaspoon of crushed black pepper and 1/2 teaspoon of shezhaun pepper.
add peas and barley
simmer for 1/2 hour
remove chicken carcuss and seperate the meat
add chopped celery
10 mins later add chopped carrots
10 mins later add chopped leeks
add the seperated chicken meat
add chopped parsley, season with salt and pepper and serve.0 -
Have been searching recipe threads and have found some lovely 'use up' soup recipes but just wondered if we could have a thread dedicated to soups!! This time of year I love a hot bowl of homemade soup but tend to stick to old favourites. I'm sure you old stylers have some I would never have dreamed of!!
Last week I used up a sorry looking celery head, some stinking blue cheese and a leftover chicken breast! Result Celery and Blue Cheese soup topped with Chopped Chicken and Croutons!! It was delicious!!
Any other random combinations you can think of?

Come colder weather I love Baked Potato Soup. It's thick and full of really heart-warming things like cheese, cream and bacon...if you want a healthy soup, this ain't it! This is pure, cold winter night indulgence on the cheap. The recipe is from someone on Recipezaar and I think the reviews speak for themselves.
Another of my winter favourites which you can leave bubbling in a crockpot or do on the stove:
Taco Soup
1 big handful of left-over shredded chicken or a handful of cooked mince meat
1 packet of taco seasoning (Old El Paso, Discovery or similar)
1 tin of chopped tomatos
1 tblspn tomato paste
1 small can kidney beans
1 small can sweetcorn
1 large onion diced
1 small packet of tortilla chips
1 handful of grated cheese
Method:
1. Fry onions until soft
2. Throw them, along with all the other ingredients EXCEPT the tortilla chips, the cheese and cooked chicken (if you're using left-over shredded chicken)
3. Simmer on a hob top for 30-40 minutes OR use a slow cooker for approx 4hrs.
4. Near end of cooking add the tortilla chips.
5. Garnish with the grated cheese
If you like it hot, add a few drops of tobasco during cooking. You can cut out the cheese and garnish with a dab of sour cream.“Don't do it! Stay away from your potential. You'll mess it up, it's potential, leave it. Anyway, it's like your bank balance - you always have a lot less than you think.”
