    Hi,

    I have a whole bagful of veg peelings and odds and ends that I've been adding to in the freezer. I now want to make a soup out of what would have been thrown away. Any suggestions please.

    It's carrot tops and tails and peelings, mushroom stalks and skin, some chopped peppers, some sugar snap peas and baby corn that had gone a bit limp and a some marrow "rind" (?).

    I have put it in a pan of water and seasoned it and put it on to boil but don't really know how to turn it into soup. Or will it just make a stocj that then turn into soup (how?)

    All suggestions welcome.
    I have a reasonable storcupboard for adding herbs, spices, condiments etc.

    cheapest meal I know is Split Pea Soup

    150g of split peas, I use the yellow ones, but have done it with the green ones
    1 chopped onion
    2 1/2 pints water

    Simmer until the split peas are soft. Takes about 40 minutes, depending on how old your peas are. Whizz until smooth. Season with salt and pepper.

    Tastes good just with these few ingredients, tastes even better if you have some ham bone stock, or a couple of rashers, or even a stock cube.

    This serves 4 people, and you don't really need any bread or anything, but a warm roll from the oven, sliced open and with a sliver of cheese always goes down well

    I usually do "Surprise Soup" ;)
    Basic ingredients is Stock (either veg or chicken), onion, garlic, leek, herbs, carrot, broccoli and whatever I find... if I'm leaving it as a clear soup then I avoid too many "green" veg. Otherwise stic in leftover peas, spuds, sweetcorn - you name it. Cook and blitz with blender :)

    My veg soup is onion lightly fried in olive oil with crushed clove garlic and a teaspoon of salt. Stir in diced/chunked potato and carrot and anything else you might like. Ours is always potato, carrot and onion and then maybe celery, turnip or leek if there's some to spare. Maybe a spoonful of barley or soup mix. Add water, bring to boil and simmer until all cooked. Then add some frozen peas and a generous amount of chopped parsley or basil if available or a large tablespoonful of pesto if not.

    This is peasant food that needs good bread and t'is what I need if I have a hangover.
  • do you ever put cream in it? i had a vegetable soup the other day at a pub and it was so yummy, but it was a light green in colour..... havent got the guts to ring them up and ask what went into it!!

    I add cream sometimes, the trick is to add it after the soup has been cooked. Put the pan back on the hob to warm it up again gently after the cream has been put in, but you don't want it to boil again.

    I would probably just saute some onion, add the cauliflower and stock and cook till tender, then blend with some cream. Broccoli is also nice made like this.

    I don't tend to follow recipes for anything, prefering to taste along the way and if it needs a bit of something else, I throw it in.
