bulchy, not a recipe for soup but I'm making spicy pumpkin couscous today for my lunch and just doing a batch of pumpkin muffins too ..... they're both really yummy !
Thanks for all the well done's - got a long journey ahead of me but really enjoying what I'm eating and determined to lose the weight and keep it off this time !

Pumpkin, Ginger and Apple Soup 0 points and serves 410 spray low-fat cooking spray 1 medium onion(s), chopped 1 medium apple(s), chopped
1 small carrot(s), chopped 2 teaspoon grated ginger root, fresh
450 g pumpkin, deseeded and chopped 2 portion stock cube, made up with 850ml of hot water 1/4 teaspoon spice, either allspice or nutmeg 1 pinch salt, and freshly ground black pepper
1 teaspoon parsley, chopped, to garnish
Instructions- Heat the cooking spray in a large saucepan and saut! the onion, apple and carrot for 3 - 4 minutes, until softened. Add the ginger and stir well.
- Add the pumpkin and stock to the saucepan. (If you are wheat or yeast intolerant, click here for a fresh stock recipe). Bring to the boil, then simmer gently without a lid for 20 minutes, until the vegetables are tender.
- Transfer the soup to a blender or food processor and blend for 15 seconds, or until smooth. Return to the saucepan, reheat and season to taste with allspice or nutmeg, salt and pepper. Serve, sprinkled with chopped fresh herbs.

Tuscan Pumpkin-Bean Soup seves 6 2.5 points per serving
5 spray low-fat cooking spray, or enough to coat pot1 medium onion(s), coarsely chopped
375 g pumpkin, cut into chunks 850 ml fresh stock, chicken
400 g cooked cannellini beans, drained and rinsed
1/4 teaspoon oregano, ground 1/8 teaspoon salt, or to taste 1/8 teaspoon pepper, black, or to taste 6 tablespoon parmesan cheese, grated
Instructions- Coat a large soup pot with cooking spray and set over medium-low heat. Add onion, cover and cook until tender, stirring occasionally, about 6 minutes.
- Stir in pumpkin, stock, beans and oregano; simmer 15-20 minutes.
- In a blender, process soup in batches until smooth. Return soup to pot and reheat; season with salt and pepper.
- To serve, ladle soup into bowls and top each with 1 tablespoon of grated cheese.
NB. Vegetarians should use vegetarian parmesan

Does anyone have a free or low points recipe for pumpkin soup please?? I have never tasted pumpkin before, I've led a very sheltered life :rotfl:have always just scooped it out and chucked it away when making lanterns for the kids at halloween :embarasse not very mse I know :obut never mind. I love the redpepper and bns soup, could I just replace the bns with pumpkin?

yes you could just change it around.. suggests on the pumpkin soup say if you cant find pumpkins to use butternut.. i dont use the peppers in my soup as i find it yummy enough without..Those we love don't go away,They walk beside us every day,Unseen, unheard, but always near,

Thank you for posting the recipes, I'll definitely be putting pumpkin on my shopping list for thursday, will make soup either saturday or sunday and let you know how it turns out, but both sound delish, dont know which one to try first, thank you.
jtb, thanks, will see if I can find the muffin recipes, will get back to you if I cant, havent made muffins for a while and keep promising the family I'll make some, so these should go down well. Also, I dont like couscous but dd and oh do, so will let you know if I cant find recipes, thanks again.

hi all,
terrific weight loss for some of you this week. well done to all.
Well i sit here hanging my head in total and utter disgrace. Having had a flying start for 3 days it all went pear shaped- or should i say pasta shaped.....unexpected night at the italian and all my will power went byebyes..
somebody give me a huge slap, or kick up the backside please.
my weigh in tomorrow and hate to think what it will be. trying desparately to be good but feeling a failure at the moment. Will have to try harder this week.
