Meritaten,they are lovely people but they just won't do vegi.
They've made it plain in the past that a meal is'nt a meal without meat.
If I tell you that both husband and wife are born and bred countryfolk and like to go hunting and fishing and prepare and eat their kill it might give you a bit of insight into what kind of people they are.
I don't mind cooking the meat for them as long as they are prepared to eat my inexperience without moaning about it :rotfl:.
Its just very hard to know what's going to taste good with anything, since I have no idea what it tastes like.
No one's complained yet but maybe they're just being polite.

Chicken and Apricot Casserole
3 or 4 chicken breasts (for 4)
Plain Flour
Salt and pepper
1 teaspoon dried thyme
olive oil
2 onions
1 garlic clove
4 sticks celery
1/2 pt chicken stock
8 oz dried apricots soaked in 300ml (1/2 pint) orange juice
parsley to garnish
heat oven to 180 / 350 / gas 4
1. cut chicken into chunks, toss in seasoned flour with thyme
2. fry chicken in oil to seal, transfer to casserole, fry onions garlic and celery in oil for 4 minutes and transfer to casserole
3. Stir chicken stock into pan add apricots and orange juice, bring to boil
4. pour into casserole , cover and put in oven for 45 mins
5. Can be served with rice, spud and green veg if required

I'm a devout carnivore (so many species, so little time!) but, as a cook, I hate the term "vegetarian". There are so many perfectly good dishes out there, that just don't happen to contain meat.
I regularly cooked for a carnivorous lady friend, who's partner is vegetarian. When cooking for both of them, I refused to cook "something for the vegetarian" and we all got a vegetable dish.The acquisition of wealth is no longer the driving force in my life.0 -

I don't see why it's so rude and selfish? If a vegetarian goes to eat in a house of carnivores they DO expect to be catered for with a non-meat dish! IMO it's very nice of the OP to extend them the same hospitality as I'm sure they would her.If you feel my comments are helpful then I'd love it if you 'Thanked' me!0 -

I have a couple of chicken breasts out of the freezer and I don't know what to do with them for dinner tomorrow. dinner is for me and hubby.
Fed up with doing curry or casserole

Depends on what you have in cupboard.
Coat with, in this order, seasoned flour, milk (evaporated is best) and crushed plain crisps.
Cook for 40 - 50 mins at 180C
Serve with baked potato etc.0 -
Marinate them in reggae reggae sauce for a couple of hours, grill and serve with peas and rice.

Slice open to make a pocket, fill with soft garlic cheese (about £1 a shot in my local - about a quarter needed for this), wrap with smoked Italian ham if available (if not smoked streaky bacon will do, bake in medium oven for about 20 mins. Serve with anything - new potatos and green salad goes down well here. Easy peasy but tastes really good.0
