    Hi

Having read your post and those that follow - have you got any wholegrain mustard? What about mixing grated cheddar, cream cheese and mustard together and stuffing that in to chicken breast then wrapping in bacon and baking - not horrendously difficult and you may have everything in so no need to spend any money. Serve with potatoes and veg.

Hope you have a great evening.

Would the l/o wine lend itself to a wine sauce? I'd be tempted to give it a go, just using the rose in place of white wine.

I use butter, flour, wine, herbs and seasoning, and just wallop it all together in a little saucepan, and we'll be having that on Quorn fillets tonight. (At Mr LW's request, I might add);)

how about chicken stuffed with cheese, wrapped in ham, then with a garlic tom sauce. or you could roll some chicken in cling film and poach it, then pan fry with some butter.

I think I'd pan fry the chicken breasts then add a mix of sauteed onion, garlic, tomatoes, herbs (chopped bacon and/or mushrooms would go well too if you have them) etc., stir through the cream cheese at the end. I'd serve with salad or a green veg if I had it. Doing posh things with potatoes can take a meal up a notch - rosti, croquettes etc., or just doing really nice rice and pack it in an oiled small glass or teacup, then upend for a classy look.

It's the extra bits that I think make a meal look special, and show that you've made it feel like a special event.

    Have fun.
