What can I do with chicken breast fillets...

    I go with the KISS principle. (Keep It Simple Stupid).
    therefore - pan fry them in a little oil (and butter if you use it). when cooked remove and leave to rest. I assume you have the side dishes ready.
    now add either a good glassful of wine or chicken stock to the frying pan.
    a little pepper and salt if you wish. bring to boil and reduce a bit.
    now you can either serve it 'as is' or add a little cream to the sauce. Chuck in a few halved green grapes and you can call it 'Chicken Veronique'! but thats optional!

    Ich - thanks for the suggestion but to be honest not loving the sound of it.

    Proliant - sounds good, not got that sauce but can marinate in something else, thank you

    Pont - loving that, not got bacon or cheese but will do it one weekend when been shopping, thank you

  • I done chicken breast this evening and browned it off in a little olive oil, coated in smoked paprika, black pepper, rosemary and a little lemon juice and topped with streaky bacon and finished off in the oven. It was yummy.

    :eek: How can you not have them?:D

    Stuff them with butter and garlic puree and some finely chopped mushrooms (if you have them;)) or celery(ditto:)). Wrap in foil and bake for 20 minutes then open the foil and bake for another 5 mins to colour. Pour the buttery juices over.

    I don't have a lot of things but need butter so will make up a garlic butter and get some bacon out of the freezer as i think we have some in there - trying not to buy many additional things x
