Would be nice turned into chicken caesar salad for a treat.

I marinade up to 4 fillets in garlic, ginger, a bit of chilli and then thread strips of chicken onto pre-soaked skewer sticks. Add baby tomatoes/courgettes or whatever you can load up and grill or bbq.

Kebabs or coat in BBQ sauce wrap in tin foil and chuck on the BBQ?
Split a pocket open and stuff with cheese and wrap with bacon.
Stir fry them.
I done a mini roast in the slow cooker once, chop up veg of your choice along with sliced potatoes put in the bottom of the SC and cover with veg/chicken stock put the chicken breasts on top the veg but not in the stock and cook slowly. It was really tender when I done it.

Stuff with a filling you like, eg garlic butter or cheese, then dip in beaten egg and then breadcrumbs. Fry in a little oil for 20 mins or so, or you can bake in the oven - delicious!
Poach cubed chicken breast in some stock, then add pureed garlic, herbs and cream and use this as a lovely pasta sauce. (or serve with potatoes, rice etc instead of pasta)0 -

It's our staple food here.
Rather than bacon, I wrap in parma ham, it makes it lovely and crispy but moist inside. This is a lovely recipe

Marinading also keeps the moisture in, we eat them marinaded in chilli, olive oil and herbs and serve with roasted sweet potato and salad.
You can coat in yoghurt and then dip in breadcrumbs and bake to make a healthier fried chicken.
I also almost always cook mine on the griddle, rarely in the oven. I find the oven dries them out but the griddle I can oull them out at just the right moment.

Best way to keep chicken breast moist when cooking is to wrap them in tinfoil and oven cook for 25 minutes.
You can brown them off in a frying pan with a little olive oil first if you want.
A recipe I really like is to stuff with garlic and herb philadelphia and wrap in proscuitto ham and a sprig of rosemary. Brown off in the pan for 2 minutes each side and then cook in tinfoil in the oven for a further 20 mins. Lovely served with either pasta in a tomato sauce or with potatoes.0 -
I have one chicken breast in the fridge and I can't think what to do with it.

You can slice it and pan fry then add to pasta or rice, I like to do this with mushrooms and maybe some cream but you can do more of a fried rice type dish...
The possibilities are endless!0
