    Kitty - I REALLY like that idea -- why didn't I think of that? Only thing is, I don't have a mincing machine. :-(

    How about defrost a couple then fry with onions and red pepper, once cooked throw in some cream and taragon and serve on a bed of rice.

    its yummy!

    (rather than cube though do thin slices the width and length of your finger)

    you don't need one, good knife skills, or put it in a mug or similar container and use a pair of scissors. easy peasy.

    I had a home made chicken & mushroom curry with boiled rice for dinner.No jars of sauces,just spices from the Tabba & tin of chopped tomatoes.I used Icelands frozen chicken breast fillets which,at £4 for a fairly big bag,are better value imho than fresh chicken breast.They're easier,convenient & a bag lasts me about 3 weeks.

  • Cut a pocket in the side, pop a small chunk of goats cheese & some spinach in, wrap whole breast in bacon/pancetta and bake in the oven approx 30 minutes. Delicious (if not very healthy!)

    Pan fry the chicken, pinch of salt and a sprinkle of lemon/lime juice. If you've a lid to the pan pop that on for a few minutes while it's cooking and it keeps it lovely and moist.

    Make a marinade with oil, lemon juice and fresh chopped coriander (I also use liquid smoke in mine, gives it a nice bbq flavour) and leave it in that for a couple of hours before cooking.

    Otherwise experiment with herbs and spices. :)

    I also find that if you flash fry it in butter for about 30 seconds each side,it browns it up a bit & makes it look more attractive to the eye.

    One of my favourites is chicken supreme. Defrost the chicken and just seal in a casserole dish on the hob, add a tin of sweetcorn, some chopped mushrooms and cans of cream of condensed mushroom soup. Make sure there is enough liquid covering the breast, you can add water but I prefer to just use all soup as nice and thick and creamy. Stick it in the oven at about 160(fan oven) for appx 90 mins and serve with rice. Pure comfort food!
