    im having chicken breasts for tea in a stir fry...with black bean sauce and noodles....tomorrow im making them into a curry...got a big pack reduced

    In the North East, particularly round Middlesbrough way, they do a thing called a Parmo. One version I heard involved browning a chicken breast, covering it with bechamel sauce then putting grated cheese on top and finishing off in the oven. Apparently you can also add garlic, mushrooms, ham. peppers etc to the topping. Any other versions out there?

    I have a Lebanese sister in law who showed me how to make a garlic sauce that blows your socks off and makes people hate you for days afterwards - but it's lovely. To make a reasonable size batch that you can store in a jar in the fridge, use 3 or 4 whole bulbs of garlic. Peel them then either pound the cloves in a pestle and mortar with some sea salt, or shove them through a garlic press and mash with sea salt. Then, just like making mayonnaise, add a few drops of whatever oil you like, stir in. Then a few more drops and stir in. Gradually increase the amount of oil you add each time until you have something the consistency of thick custard. Then add a squeeze of lemon juice to finish. Store in a screwtop jar in the fridge - lasts ages and goes well with grilled, roasted or barbecued meat or poultry, or use it in recipes inplace of fresh garlic. A small amount mixed with butter can be used when making garlic bread. You will never buy pre-prepared garlic again. Just the thing for keeping away the vampires.

  • Hi All,

    I am having a mind blank, plus barely any food in the house

    What I do have is a chicken breast, which I have bashed out to form some sort of roulade for dinner tonight.

    I was planning to put in some stilton, but when I went to the fridge I have significantly less than I thought.

    Soooo I thought of bulking it out with some caramalised onions - do you think these flavours would work together?

    I also have a few baby tomatoes - would these work better?

    I have a decent store of herbs/spices/condiments - just no 'real' food!

    Thanks if anyone can help!

    The onion will overwhelm the chicken and stilton slightly , but it wont taste bad, depends on your taste really, if its all you have in I would go for it, or perhaps you could do the onion with some rice, and stuff the chicken with stilton and cheddar

    This is my first post on this forum, so here goes!!

    With 4 fussy children, I find it hard to cook something they will ALL eat...but this one they wolf down pretty quickly.

    I use a large bag of frozen chicken fillets
    ! large onion
    2 tins of condensed chicken soup (topped up with 2 tins of boiling water)
    As much sage as you can handle
    (also sometimes add new potatoes still in their skins)
    Throw it all in the slow cooker and leave it for the day.
    As I said, sometimes I add new potatoes, but other days I just serve it up with pasta.

    I also cook up veg and liquidise it in with the gravy as one of my girls will only eat peas sweetcorn and runner beans!!

    I've only been reading this forum for 2 days, and now I am competely hooked!!

    I'd make it using boned chicken thighs - I bought 14 of them from the butcher yesterday for £4.50 :T They're not FR, but are from "enriched" flocks.

    Thank you. Sorry I posted in the wrong place, still finding my way around and such a lot of brilliant threads to read through!!
    I have also now started freezing any of the leftover sauce to either use again, or make up gravy for roast chicken.

    We are having a cupboard challenge at the moment. I got chicken breasts in the fridge and like to cook them tomorrow. I normally marinate them in soy, garlic, cooking oil, salt/pepper... but I've ran out of soy sauce.

    3 breasts between 2 adults and 3 children under 7

    Any suggestions what I can do with the chicken.
    I got
    grain mustard
    honey
    lemon juice
    garlic
    basic herbs and spices
    eggs

    No white wine (got red) or cream (but my budget can stretch to buying some cream)

    No onions (could perhaps buy one)

    Got to buy potatoes
