You'll find a whole chicken is much better value than chicken breasts. Just ask the butcher to joint it for you or do it yourself -easy peasy;)0

As thriftlady says, in future try buying a whole chicken, even if your family don't eat dark meat, they won't recognise it in stews, curries and pies!
The rubber chicken thread is great! Have a look there for inspiration!
Things I do to stretch anything are casseroles, stews, curries, pies - the addition of some beans and/or veg make the meat go a whole lot further!
How about using some of your chicken for a curry tonight, add plenty of veg and some chick peas, with rice, naans and onion bhajees it'll go for miles!
Or make a spicy tomato sauce, with peppers, onions, butternut squash, some chicken and some chick peas and serve over cous cous flavoured with a good squeeze of lemon.
Or just make a big pie, chicken, veg, gravy and top with pastry.

It'll taste better, too - IME chciken breast fillets taste of nothing at all

Hi all..
Have got some great ideas from this thread, but am looking for some ideas for a cheesey based filling for chicken breasts I am going to wrap in parma ham.
I only have crumbly lancs, grated mature cheddar and a tub of philly
other items I have are -
fresh - mushrooms, peppers, red onion, spinach, garlic
have other things in such as various dried herbs, mustard, mango chutney, chilli sauce etc
was thinking of mushroom and grated cheese but am sure someone can suggest something a bit more exciting?
Another question.. do I split the chicken and bash it or just leave as the breast?
Also, do I brown them once wrapped in the ham before putting in the oven or just put straight in (I presume I would wrap in foil?)

well, I decided to batter the chicken
mixed philly, bit of garlic paste, didnt have chives so finely chopped spring onions and a bit of the parma ham
spread on the flattened chicken then rolled and covered in the parma ham (realised after it might have been easier to lay the chicken on top of this first!)
put on foil in a baking tray drizzled on olive oil and folded the foil over - hopefully it will turn out ok

I have taken chicken breasts out for dinner tonight. What's the best way to cook them please? Baby will be 1 in a few weeks and will also be having chicken with us tonight.
I have a slow cooker but have never tried chicken breast in it. I don't know if you can cook chicken in it? I'm out of potatoes and can't get to the shops as like most our roads and pavements are like ice rinks :rolleyes: .

You can slow cooker them
You can also grill, or wrap in foil and bake in the oven (my preferred way) Do test to make sure the chicken isn't pink inside though.
Do you have other veg? You could maybe do a soup/stew with them? Marg/suet and flour for dumplings?Proud to be dealing with my debts :T

I either cook my chicken breasts in the oven with some garlic and italian seasoning (I put little slits in the chicken and push the garlic inside) or grill them on the george forman style grill.
Another thing I like to do with chicken breasts is smear them with a mixture of tomato paste, garlic paste and seasoning (sometimes rosemary, sometimes chilli flakes) wrap in bacon and roast in the oven...served with roast vegetables is delish

Stuff with boursin, wrap in bacon and roast in oven for 15 - 20 minutes.
Chop up chicken breast, add onions, peppers, mushrooms and add a glass of wine and some chicken stock. Cook in slow cooker until chicken is cooked through. Add a little cornflour and water paste to the stock/wine to thicken. Serve with rice and peas. If you don't have any wine, add tinned tomatoes.Thanks to MSE, I am mortgage free!

wrap individually in cling film and batter with a rolling pin just to 'thin' them out abit, shove some cream cheese and spring onion on each one, roll them up and wrap with bacon strips....into the oven for about 30 mins and hey presto ...done....and yummy...just check juices are clear and meat white when cooked.....'Normal' is a dryer setting.0
