    Some veggies sauted first and then mushroom or celery soup? as a casserole, sort of instead of a cook-in sauce.

    With rice possibly?

    Or do you have the ingredients for a stir fry, with rice or noodles?

    I don't know what else you have in your cupboards, but if you have anything like stuffing for a roast you could always slit the chicken breasts and stuff them with that, then bake them for 40 minutes. Kind of like a mini roast?

    Or if you've got some veg, rice and stock, you could always chop up the chicken and fry it up with the veg, then add some rice and stock to make a risotto. Would take about 20-30 minutes?

  • Apologies as I am sure there must already be a thread for this but I couldn't find a general one when I looked through the thread index or by searching.

    Anyway I have just got some chicken breasts out of the freezer for our dinner tonight and am wondering what to do with them. We always seem to end up having chicken pasta bake and I'm getting a bit fed up with it!

    I have got a slow cooker but won't be able to use it as they won't be defrosted in time, unless I can do something from frozen in the SC.

    We have got:
    Pasta
    Rice
    Potatoes

    Sweetcorn
    Peppers (yellow & orange)
    Onions (red)
    Tinned tomatoes (chopped)
    Frozen peas

    Hardly any herbs (I think just parsley and oregano - the rest were taken by our lodger!!)
    Chicken stock (frozen, and cubes)
    Garlic
    Various sauces

    1 tin Campbells/Baxters condensed chicken and white wine soup (I usually make this up with half liquid but all milk as a sauce for chicken supreme)
    (Milk, no eggs)

    Onion rings/chips (OH likes chips but I don't so I usually have onion rings and/or mini roast potatoes)

    Bacon


    Any ideas? I can possibly get OH to pick some extras up on his way home. Only other restriction is I am allergic to cheese and we're not too keen on spicy food.

    (this is taken from the Grocery Challenge and been/being put together by angelnikki and rosieben :T)
    I sometimes do:-
    - a chicken and sweetcorn pie with layered pots on top. It can have a cheesey or basic white sauce in (white for you ;)).
    - sweet and sour chicken
    - chicken, pepper and potato hash
    - chicken curry and rice or naan
    - lemon chicken
    Most of those recipes are on the links I gave you, except the hash (which I can type up if you fancy it).

    Hey there!

    I made a chicken dinner last week, and it worked out really nice. I took the chicken breasts and browned them in a frying pan, then put them in an oven dish and cooked up onion, garlic and chopped peppers in the pan, turning the oven on to heat up. When the veg was cooked, I stirred in a tin of tomatoes and let it all cook down and thicken, then poured the tomatoes and veg over the chicken in the dish. Blended down a crust of bread for crumbs, mixed with salt, pepper and herbs and sprinkled over the top - put in the oven for half an hour to cook through and brown off.

    Thanks for the ideas, those sound great. We quite fancy the chicken and sweetcorn pie, but I can't get the link to work. :(

    Edit: Oops looks like my internet was playing up, it's working now! Just trying to find the recipe.

    Edit 2: I still can't find the recipe... am I being silly? Baby due yesterday so at least I have an excuse for airheadedness! :rotfl:

  • Sorry to keep posting. Does anyone have an idea how to make this chicken/sweetcorn/potato pie? I am not very good with potatoes and don't trust myself to experiment yet, though I could probably experiment with the filling.
