But what I do try to do - especially with my curries - is to adapt the basic meat one, so they use all the same basic ingredients. Here, I've - obviously - substituted the beef or lamb for chicken, added it earlier to ensure that it is cooked thoroughly, adjusted the chilli powder and added the yoghurt and coconut (and the latter in a readily available form).

Sorry... Off topic...but that tends to be how most Indian restaurants do things. They have a vat of basic curry sauce on the go and use it as the basis for most sauces, just adding specific, required ingredients along the way or using them first and adding the sauce afterwards.
OP... It's been a while since I cooked chicken breasts but our family favourite was always very simple roasted breasts stuffed with fresh herbs and garlic butter. Alternatives for stuffing them are roasted cherry tomato and pesto, mozzarrella and basil or stilton stuffed breasts wrapped in bacon.0 -
What about beef wellington?
Or slice the chicken and flatten it out, then put a bit of parmesan in the middle with pesto and sund dried tomatoes. Wrap it up in streaky bacon and voila.0 -
~ Chicken wrapped in bacon
~ Chicken with soft cheese/garlic/herbs in the middle (also good wrapped in bacon to hold the cheese in, but not wishing to sound repetitive here...!)
~ Shredded and stir fried with noodles and beansprouts and spring onion - chicken chow mein! :T
~ Cooked with a tin of chopped tomatoes and some roasted vegetables poured all over it (we had this last night for dinner using mushrooms, courgettes, peppers and a red onion and served it with little new potatoes - it was yummy...:p)
~ served up roasted with veggies like a "Sunday dinner"
~ cooked, shredded and served in pittas or wraps with salad and (garlic) mayonnaise/chilli sauce (or other sauces of choice)You could even go "Mexican" with guacamole, salsa and sour cream with some pan fried onions and peppers - fajitas-style...
Lucky you - I wish we had 17 chicken breasts in the freezer! :rotfl:

What about chicken strips or nuggets?
Chop into strips or nugget sized pieces, coat in seasoned flour, egg and then seasoned breadcrumbs - we sometimes have spicy indian style seasonings or herby italian style - whatever takes your fancy
Then lightly fry in some oil and finish off in oven to give crispy coated chicken.
Eat as they are or use to fill pittas/wraps
We also sometimes pan fry strips of chicken with some thickly sliced onions, garlic and a few mushrooms, season and then stir in a little cream or philadelphia (whatever is to hand) and serve with tagliatelle pasta - yum!
Cheers

Evening everyone...
wow what a day!
Could somebody give me some sort of idea please?
This morning I took a couple of chicken breasts out of the freezer with the idea of making something with tinned toms and the chicken but I haven't got any toms, not tinned or fresh. So, my question is could I use a tin of tom soup and add spices, herbs, whatever or should I spice it up, grill it and bung it in a bun?
Help meLucylema x :j0 -
If you're going to use a tin of soup I would make it more of a casserole thing rather than trying to bung it in a bun. Chuck in some garlic etc and perhaps serve it with some rice?
Sorry doesn't sound very imaginative!!I have a gift for enraging people, but if I ever bore you it'll be with a knifeLouise Brooks

Hi, you could use a tin of soup and make a sort of casserole, this will take a bit longer to cook though, I would do it in a large heavy bottomed frying pan, start of an onion and maybe some garlic and any herbs you have, also any pepper, mushroom, leeks etc add the chicken and brown, then cover with the soup, bring to the boil then turn down and simmer untill done.0

You could chop and cook the chicken breasts with some onions and any veg you have. Mix them with cooked pasta and add to a casserole dish. Pour over the soup and top and sprinkle with grated cheese or breadcrumbs to make a pasta bake.
We have an earlier thread on chicken breasts that might give you some ideas so I'll add your thread to it to keep the suggestions together.
