Pasta and chicken with broccoli (all mixed in with a creamy sauce)
chicken casserole (maybe not the weather for it)
chicken and bacon with mayo (either sandwiches for work or with pasta again)
    grilled with salad

Nigel Slater's Flash Fried Moroccan Chicken is yummy and, if you cook extra, is equally yummy cold the next day.

12 oz chicken fillets (I never weigh mine - usually use about 4 chicken breasts)
1 fresh red chilli pepper seeded and finely chopped
1 teaspoon crushed dried chilli pepper
    2 cloves garlic finely chopped
    juice half lemon
    2 tablespoons olive oil
    1 teaspoon ground cinnamon
    2 tablespoons sultanas or raisins
    2 tablespoons pine nuts
    1 tablespoon chopped mint

For the full recipe see here

We usually have this with cous cous.

(I don't always add all the marinade - prefer a drier flash fried version)

    Hi Plushroom,

There's a recent thread on chicken breasts with lots of lovely ideas so I've merged your thread with it to keep all the suggestions together.

    Pink

Thank you! So many good idea's already, I'll have to make a word document with them in just in case I ever end up offline!

Well you could just bung them in slow cooker with any veg that you fancy and some stock (maybe even a touch of wine?) and then after a few hours chuck some pasta in too?

How about sticking them in the slowcooker with a can of tomato soup, cooking until done, then taking out and sprinkling with cheese (mozzarella by choice) and browing under the grill. Serve with pasta or rice and a nice green salad.

I make a nice curry, although it's more of a stewy kind of curry that my MIL taught me.

Cut up chicken breasts, fry off till cooked - 5 mins.
    Add 1 tin chopped toms.
    Add 1 chopped onion
1 handfull of rasins (or other dried fruit that you like)
Good amount of curry powder, maybe 1 tablespoon - to taste really.
    Add some worcestership source
    Add 2 tsp cumin
Splash of mixed herbs (to your preference)
A few drops of tabasco sauce
2 tsps of chilli flakes (or powder)
    1 glove of garlic (optional)

Then cook down to a thick saucy texture, (if it goes too far just add some water!). Can quite happliy be done in a slow cooker for 1-2 hours, or about 20 mins in a pan.

And really anything else you fancy, you could add some veggies, like frozen peas and carrots, or some dissicated coconut.

A great way to use up leftovers!

Serve with rice, or bread and butter.
