    Hi
    I make crispy chicken strips for my girls:

    Cut chicken breasts into strips (I do this when they are semi frozen as easier to cut)
    Dip into beaten egg
    Dip into seasoned breadcrumbs or flour
    - use chilli powder, ground cumin & ground coriander for spicy chicken strips
    - or dried herbs for herby strips
    spray or drizzle with a little sunflower oil and bake in oven about 200 deg C
    for about 15 mins or until cooked.
    Serve with salad, potato wedges or beans or veg whatever takes your fancy!
    Can also serve in pitta pocket!

    Quick, easy and yummy!

    Do the above and add a tortilla, small chopped salad and ketchup and mayo on side and let them make their own wraps. Ive never seen my 3 year old eat salad till I did this. She adds lettuce, cucumber and tomato. Being a girl she mixes the sauces together to make pink sauce. She eats loads.

    Oh no! I just realised I forgot to buy oil today. Will it be okay to use margarine do you think? I love the pita bread ideas and will remember to buy some when I'm out next.

    Parmesan baked chicken

    1/2 cup finely grated parmesan cheese
    1 cup of breadcrumbs
    herbs of your choice (mixed herbs is great, maybe some garlic salt, pepper, whatever you fncy really)
    butter
    garlic

    Mix the parmesan, breadcrumbs and herbs in a bowl.

    Melt the butter in an ovenproof dish, and put in some crushed garlic.

    Dry the chicken breast on some kitchen towel. Dip it in the melted butter, then roll it in the breadcrumb mixture to coat.

    Put the coated breasts in the ovenproof dish which you used to melt the butter.

    Bake in preheated oven for 35-40mins at 180 degrees.

    The parmesan makes it taste gorgeous!

    I made this for us yesterday as my OH wasn't feeling too well:

    pop into a pressure cooker:

    potatoes (peeled and cut into normal steaming size??)
    carrot chunks
    whole peeled onions
    peeled garlic cloves
    tomatoes (whole)
    pearl barley
    a bay leaf
    season
    lay the chicken breast on the top of veggies
    lay a bunch of parsley on the breasts
    water to the 1/3rd - half mark
    lid on and cook for 1 and half hours or til pearl barly is soft
    It should be soft and yummy and warming!

    hi,tonight i,m having a go at making chicken wrapped in bacon with a mustard and tarragon sauce.when i wrap the breasts in the bacon and put in the oven is it the same rule for when they,re done as a full chicken?stab with a skewer and if the juices run clear they,re cooked?also how long do they take to cook?half hour?hour?or what? thanks in advance.:D

    I cook mine at about 180 for 30 mins.
  • I generally sacrifice the piece I'm going to eat and cut into it's thickest part with a sharp knife to check that it's white all the way through.

    About half an hour/40 minutes should do it.

    We had this at weekend, but i stuffed the chicken with stilton and served with salad.
