What can I do with chicken breast fillets...

1) Bash the fillet out until its a flatter shape, cut a pocket into it and place some boursin-style cheese and then dip in egg/breadcrumbs and fry in olive oil for a delicious home-made kiev
2) Cut into strips, marinade in lager, chilli, garlic, dried coriander and dried cumin for a couple of hours, pan fry with green and red peppers and onion and then serve with pancakes, salsa, sour cream and grated cheese for fajitas.
3) Cut in strips, marinade in sesame oil for a short time, cut up carrots and onions, fry carrots and onions in some corn oil in a wok, add some chopped garlic and raw chicken strips. Boil some chinese noodles, drain and sprinkle with some sesame oil. Add chinese noodles into chicken in wok and add beansprouts, soy sauce, two tblespoons of water and half teaspoon of sugar. Cook a little longer and then serve immediately.Thanks to MSE, I am mortgage free!

Chicken and Mayo with Salad sandwiches for lunches
Chicken pasta bake

DS knows to look out for meat/poultry that's reduced - we had a huge pork leg joint a few weeks ago for £6, enough for two big roasts!0 -

One of our def favourites is crispy chicken in wraps.
Cut up breast into bitesize chunks, mix flour with loads of seasoning/spices of your choice - I sort of make it up as you go along but always have chilli & paprika. Then fry in olive oil for a few minutes. Then I just put on the table with some salad, ketchup sour cream and wraps.0 -
My mum makes chilli con carne but with chicken, so I guess that's chill con chuck! serves with plain rice and low fat yoghurt,
I'd second the tortilla wraps.
Beat them out and marinade in olive oil, crushed garlic, lemon juice and herbs before grilling.
dip in a mix of grainy mustard, honey and soy sauce before grilling
wrap in foil and roast in the oven, serve with veg like chicken dinner

One well seasoned chicken breast per person. Place in over proof dish. Pour over homemade or good quality bottled tomato or arrabiata sauce. Put a slice of mazzarella onto each breast and top with a basil leaf. Stick in a med-hot oven for 30-40 mins until cheese golden and bubbly like a pizza. Serve with salad or new pots and french beans, or rice, or pasta ....Punky x0

Chicken griddled with balsamic vinegar and sweet chilli sauce, add avocado, sour cream and cheese into a wrap and prepare to enter heaven!!0
