    Now I have so many recipes I'll have to ask my DS to bring more chicken! :rotfl:

  • This is what I've just done with 5 chicken breasts we're having for supper tonight.

    Cut them into chunks (they're going on kebab skewers)
    Mixed a marinade of; chopped red onion, crushed garlic, lemon juice, a tbsp of Bharat spice blend (Barts), a tbsp of honey and several large spoonfuls of homemade yogurt, and some salt.

    I'm leaving them to marinate all day. Will let you know how they turn out, but hopes are high ;)
  • Made this up on holiday in France and works a treat everytime. This is a summer dish as it needs lots of basil but I imagine a dollop of pesto would be ok too.

    Chicken Lavandou

    INGREDIENTS
    • 8 (skinned if preferred) chicken thighs or 4 chicken breasts, bone-in
    • 1 onion, chopped
    • 1 garlic clove, finely chopped
    • 2 tablespoons olive oil
    • 1 small glass of wine, red or white - optional
    • 1 can chopped tomatoes or equivalent
    • 1 teaspoon paprika
    • 1 teaspoon oregano
    • a large handful of basil leaves – or more if you love basil
    • Dash of soy sauce
    • Dash of Worcester sauce
    • salt and pepper


    METHOD
    Heat the oil in a large sauté pan and fry the chicken pieces until browned. Remove from the pan and set aside. In the same pan (if using thighs you may want to remove some of the fat that has come off the chicken) fry the onion and garlic over a low heat until golden then return the chicken. Increase the heat and add the wine, stirring all the time until the wine has almost evaporated.

    Add the sauces, tomatoes and all the herbs and spices. Bring to the boil then cover and simmer on a low heat until the chicken is cooked. Thighs will take about 30 minutes, breast 20 minutes. Check every now and then to make sure the sauce has not dried up.

  • I like to make a huge veg stew then to add variety will fry chicken chunks with whatever herbs or spice mix I feel like that day.

    Also try cooking it in different liquids - we like lemon chicken
    In non-stick pan 'fry' chicken in juice of a lemon - if you want to serve with a sauce over add something like sour cream/ cream/ yoghurt into the lemon & juices, stir and serve - easy and goes well with all sorts.

  • Thriftlady you're just up the road from me :D I'll look for the spices when I shop tomorrow, my cupboard needs replenishing and I fancy your kebabs!

    Thanks for all the suggestions, now I have lots to work with in future too! I might even need a wander up the road to Sun Valley factory shop!

    chicken creme fraiche with orange / tarragon.

    chop onion soften for 5 mins.
    slice chicken & brown in pan gently cook till done.
    Add 10fl oz creme fraiche with juice of one orange & a little zest, and a little white wine (optional)/ add tblsp chopped tarragon - half tsp dried.

    A great lunch idea : coronation chicken wraps
    Cut chicken into small chunks and fry till cooked
    Allow to cool a bit
    Add mayo and some curry paste
    Put in wrap and eat - YUMMY
    Save the earth, it's the only planet with chocolate! :)
