Hi all,
I've not got much of a food budget left for this month, which will be for bread, milk, fruit etc, so I was going through my cupboards thinking about what I can cook. In my freezer I have around 8 chicken breast I've discovered (oops!) and don't know what to do with them! So far my ideas have been:
Chicken stir fry
Chicken curry
Can anyone inspire me please? I have loads of herbs & spices, plus a good stock of basics like pasta, rice, noodles etc

why don't you try chicken snitzels?
Just cut your chicken breast in half, wrap it in cling film, bash it real thin, dip in egg and seasoning, then breadcrumbs, fry till cooked, not long, i serve these in pitta bread with houmous, salad, cut very, very small!!!! whenever i do this, everyone loves it, i got it from Israel, street food there!!:o0 -
cook chicken, mix it into a white sauce with peas , mushrooms and bacon( can leave bacon out) and put in a dish and u can either make a pasty pie where u line dish on bottom fill and then put a top on , or put in dish then just add a layer of puff pastry with grated cheese on it. or add to a dish and top with mash.
or chopped breast up and cook in frying pan with a little soy sauce. then serve in wraps with lettuce , rice , cheese and ceaser dressing.
or diced up and add to cooked pasta , mushroom , bacon , onions , peas , brocoli then stir through a carlic and herb dip ? or cheese and chive dip.
can't think of any more at mo . sorry.0 -
Hi storm,
There's an older thread on cooking chicken breasts that should give you lots of ideas so I've merged your thread with it to keep all the suggestions together.
This older thread might help too: chicken breasts slow cooker - something different

Reference the comment on chicken breasts drying out, I find that if you spray some of that one calorie olive oil on top before cooking and make sure you don't overcook, 20-25 mins is usually sufficent then I find the chicken stays really succulent and moist.0

I have about 15 chicken breasts and a whole herb and lemon chicken in the freezer. I plan to use it all up over the summer so I was wondering would some good ways of cooking it would be. It's just for me and OH but I wanted to make something a bit better that just cooking it in the oven and serving with gravy.
