As for the salt leaching out, simply omit salt from the rest of the dish - if the recipe asks for it, leave it out.
The leeks dish would be the best option, IMHO - definitely not the asparagus which is not in season and likely to be disappointly tasteless.
What other flavours are in the chicken? Would you be better with a plainish potato dish such as rosti?
I believe the ingredients accompanying the chicken were leeks, olive oil, salt & pepper and thyme. There may be others but there was a change of plan last night and SIL wasn't supposed to be coming until Friday evening, so I didn't bother to remember or make a shopping list.
I've just had a call though and its back on again tonight so I'm in a bit of a panic now. I dont think there was anything else in it, but I cant be sure. I was going to make a list tonight and get it on the way home tomorrow as I finish at 1.15 on Fridays, drat!

Are you sure you're thinking of rosti and not something else?Rosti is just grated potato, patted into a "cake" and then fried. I don't fry them, but brush them with oil and put them in the oven. This way, you can prepare them well in advance and simply leave them to cook in the oven without having to fuss over them at the last minute.

My DS has a part time job at a cash & carry so he often gets good bargains, this week he brought home 5kg of chicken breast fillets for £7 (seems like a bargain to me!)
I need ideas for family meals, I split the bag in 5 lots of 6 breasts and froze them (use by date was today). Anyone got good recipes, I'd usually chuck them in a casserole with a jar of Chicken Tonight or a tin of toms0 -
I use lots of chicken breasts and do chicken curries, stir fry chicken and veg... Sweet and sour chicken with brown rice , Chilli fried chicken with salad in Pitta bread which I love ... now my brain has frozen:rotfl:#6 of the SKI-ers Club :j

you could make
home made chicken nuggets
chicken strips (same as nuggets but in strips!)
garlic chicken with veg
chicken cottage pie

Its just something I made up myself , fry a large onion in a little olive oil, cut the chicken into strips and add to the onion then I just sprinkle medium chilli powder over as much or as little as you like to your own taste , fry till the chicken is cooked.. I make a salad of whatever I have in the fridge, and stuff pitta breads with salad and the chicken,, they are so yummy and filling... if you are not worried about calories a little mayo added just makes them even yummier :T#6 of the SKI-ers Club :j

Pollo alla diavola (sp ? apologies to Italians)
Marinate them in olive oil, bashed garlic cloves, lemon juice and lots of crushed black peppercorns.
Grill (on a griddle for preference), sprinkle with sea salt.
Serve with crusty bread or baked potatoes and a green salad.0 -
Pop a few of the breasts in a bowl poor in half a jar of Hoi Sin sauce, leave for an hour or two then roast in oven and serve with rice and veg for a nice chinese style dish. Alternative, as above, but cook on a BBQ when the summer arrives, or another alternative is chop into pieces and stick on skewer with veg and do chicken kebabs.
When you cook the breasts always cook a couple of extras and have them in sandwiches cold over the next couple of days with salad and mayo.
