What can I do with chicken breast fillets...

  • We love chicken and rice - just cube the chicken breasts and fry in a little oil and/or butter until nicely golden and then add a chopped onion. Lower the heat and let the onion soften and then add some chopped mushrooms and cook for about another 5 minutes. Stir in about 2 tbs of flour and whisk in about 200mls of milk and the same of chicken stock (I just make up a cube with 200mls water), cook until thickened and add seasonings of your choice, taking baby's portion out before if you want. I add salt and pepper, a pinch of herbs de provence and some celery salt. Serve with boiled rice. It's lovely!

    I either cook my chicken breasts in the oven with some garlic and italian seasoning (I put little slits in the chicken and push the garlic inside) or grill them on the george forman style grill.

    Another thing I like to do with chicken breasts is smear them with a mixture of tomato paste, garlic paste and seasoning (sometimes rosemary, sometimes chilli flakes) wrap in bacon and roast in the oven...served with roast vegetables is delish

    You can slice them into strips and stir fry, or cut into chunks and put in a curry?

    Do you have a steamer?

    I steamed some chicken breasts in mine a couple of weeks ago (did some sliced fillet of pork in there once too) and it was lovely and moist.

    I let it cool and sliced it for my daughter's sandwiches for school (she is a fussy eater and won't eat anything else except decent quality chicken, ham or tuna on her sarnies!).

    Plus, if you cook it in the steamer you can just set the timer and leave it, it saves keep going to check on the grill or whatever every few minutes.

    If you don't have a steamer I bought mine from Lloyds Chemist, it was only £6.99 or something although they have gone up now, they are £9.77.

    It takes about 20 mins to cook chicken breasts and you could also slice some spuds and cook those at the same time to mash up for your little one.

    I would chop the chicken, and fry in a little (olive) oil. In another pot cook some garlic, tomatoes and onions. In another pot cook some pasta. Serve all together (you may wish to just do tomato, chicken and pasta for 1 yr old, although we would give him the same as us). I you have any cheese grate some over it.

    I bashed mine flat and added a mix of philly cheese, garlic paste and finely chopped spring onions and parma ham.. rolled it up and wrapped in the rest of the ham and cooked in the oven.. it was lush!

    might be an idea to leave out the garlic and use grated cheese etc for the little one but was soft enough when cooked to cut up for them to manage a little portion
  • you can also steam them in the microwave or oven. in the microwave put them in a suitable dish and zap for about 3 minutes.

    in the oven again put them in a suitable dish, add some water and cover with foil and steam that way for about 40 minutes.

    One more thing...does anyone know how to make garlic sauce? Iv'e had the roast garlic chicken at the Harvester before and that really was delicious. Any ideas please. My breast fillets are a bit on the dry side as we ran out of foil yesterday and the sause may help... hope so anyway. Thanks.
