From what you've got already, I think I would do ratatouille style veggies (roasted veg, mixed with tomatoes and herbs), then put the chicken breasts on top, drizzled with oil and seasoning, and roast until golden. Lovely served with pasta and/or crusty bread to mop up the sauce. :drool:

Another good one with the chicken breasts as opposed to cheese stuffing with bacon is sticking a slice of black pudding or haggis inside, then wrapping in bacon.

Cut into chunks/strips, dust in cornflour, salt, pepper, maybe some turmeric. Drop into screaming hot pan with a little oil added.
It just changes the texture (and flavour) very slightly.
Yummy in rice noodle wraps with chopped up veggies, on top of a salad, with rice, whatever.
Or - become one of my DD2's heroes.
Cut into pieces. Dust in cornflour. Dip using left hand in beaten egg. Dip using right hand in panko/Japanese breadcrumbs. Drop in rapeseed oil (ordinary vegetable oil) about 1.5" deep heated to 170 degrees celsius (check with jam thermometer).
Gently place 4 - 5 pieces into hot fat and leave until they stop swimming around and decide to 'come up for air', making a slightly different sound. Turn to ensure all sides are golden brown. Place on cooling rack stood above kitchen roll whilst you finish the rest in small batches.
Serve with whatever you want.

I usually do a parmo by butterflying (so it's flat) and browning a breast, then a smear of tomato puree, dried oregano, chopped crispy bacon and/or sliced pepperami, fried red onion, mushrooms etc (depends what I have in!) then bechamel + loads of cheese & oven till bubbling and cooked through. Mmmm.Just experiment with whatever you have in, anything that you might use on a pizza.

I have a couple of chicken breasts in the fridge which i want to make dinner with but i'm not quite sure how. normally i would do curry but i am saving a couple of breasts for that for saturday. I don't want a casserole or anything sloppy. any ideas please?Lucylema x :j0

ideas so far:
pesto chicken - cut slits in chicken and spread generous amount of pesto over and rub in to the slits. Cook under the grill or in the oven .
cheesy chicken with bacon - cut a slit to form a pocket on each breast - insert either a small piece of cheese or a cheese triangle (laughing cow ) inside , wrap with bacon or parma ham (lidl black forest ham works really well). bake in hot oven or pan fry .
chicken cheesy peach thing - cut breasts in to chunks put in an oven proof dish into hot oven,meanwhile make simple cheese sauce (boil milk add cornflour , stir in cheese). Drain tin of peaches add peaches to chicken , pour over cheese sauce and then sprinkle with either crushed crisps or breadcrumbs or oats . bake for 15 mins until golden. (you can add veggies such as cauliflower or broccoli or leeks to make a one pot meal)

It's a one pot, easy recipe. Done in about 30 minutes in total (only takes about 10 minutes to prepare). Extremely yummy. Nice cold the following day too.0 -
