cheesy chicken with bacon - cut a slit to form a pocket on each breast - insert either a small piece of cheese or a cheese triangle (laughing cow ) inside , wrap with bacon or parma ham (lidl black forest ham works really well). bake in hot oven or pan fry
if i think of any more i will post them later :T
I love the sound of this and I do have bacon to wrap it up in. Do you think mozzarela (sp) would work ok????? How long would you bake it for??
I think this would work for dinner, with potatoes and veg yum yumLucylema x :j0 -
We are having this tonight:

It's a one pot, easy recipe. Done in about 30 minutes in total (only takes about 10 minutes to prepare). Extremely yummy. Nice cold the following day too.
Thanks for the suggestion MichH but I don't think Mr Lema would go for it. Shame (will make it just for me when he is working lates)Lucylema x :j0 -

I started with stuffing the chicken with cheese but tried different fillings....
black pudding wrapped in bacon (cheaper version of Chicken Braemar)
fruit pudding wrapped in bacon (gives a nice fruity taste to the meat)
any seasoning sauce I've got in the cupboard (sweet chilli, BBQ etc) and some leeks/spring onions/garlic

Make your own garlic chicken kievs!!
Butterfly them, make some garlic butter and smother over the cut side (herbs optional but basil is good!), roll from thin end to thick, wrap with bacon (or pancetta if you're feeling posh!), in oven for 20-30 mins or til juices run clear and serve with mustard mash... yum :j0 -
The other night I had made some soft bread rolls, so I cut two chicken breasts into butterflies, put it between sheets of cling film and battered it out with a rolling pin to flatten it, rubbed some fajita spice mix into it, cooked it on the griddle pan, and had it with the bread rolls like (much healthier) chicken burgers. It would be lovely with a bit of salad.0

Hello everyone
Well I'm new to cooking and have just made chicken fillet in white wine sauce. Have to say I was quite impressed with the end result and it was well tasty.
However, few little things as I'm new to cooking. It said to cook the chicken fillet for 30-40 minutes but when I added the wine after 5 mins cooking it was nearly all absorbed at the end of the 40 mins?
Does it matter if you fry the chicken fillet in a frying pan (I just browned it first then simmer) or is it best to put in a casserole in the oven?
I usually just cook for myself or maybe for two the odd time.
Would really love to try other chicken fillet dishes and any advice or simple ideas would be great.
Thanks.0 -

Chicken goujons are always nice.
Cut the fillets into thin strips. Put some seasoned(salt, pepper and anything else that takes your fancy e.g. chilli flakes, tarragon, parsley....) flour into a bowl. Into a second bowl beat an egg and in a third bowl some breadcrumbs.
Dip the chicken strips into the flour, then the egg then the breadcrumbs. Fry for about 2-3 mins each side in oil or butter until brown.
Enjoy!Won 2011: Annual tastecard membership :T0
