Hi the Pumpkin, carrot and lentil soup was -
1 onion roughly chopped
2 cloves garlic (crushed)
4 medium carrots chopped
1 1/2 medium pumpkin
1-2 cups red lentils
I just sauteed the onion and garlic in frylite til clear added the chopped carrots and pumpkin, vecon and around 1 1/2 pints of water. Let cook for 15 mins then I added 2 cups of lentils,salt and pepper, let cook for 20 mins. leave to cool and blitz til smooth (you may have to adjust the amount of water you add, as I was leaving it thick as i add milk for the kids)
the pumpkin Goulash -
Frylite
I onion roughly chopped
1 red pepper cut into chunks
1 crushed clove of garlic
2 tsp paprika
1tsp carraway seed (optional)
375g Pumpkin or butternut squash (I put in 1/2 a pumpkin and added a bit more stock)
1 large carrot cut into chunks
75g red lentils
450ml stock made with vecon
1 tin chopped toms
1 tsp splenda
salt and pepper
garnish with natural yoghurt and paprika
Spray a flame proof casserole dish with frylite add the onion and fry for 5 mins until lightly browned. Add the red pepper, garlic, paprika, carraway seed and stir for 1 min.
Add the pumpkin, carrot, lentils, stock, tin of toms, splenda, and salt and pepper.
Bring to the boil, cover and cook in a preheated oven, 180 c,(350 f) gas mark 4, for 1 hour.
Spoon Goulash into bowls top with yoghurt, paprika and carraway seeds. (i didnt use the carraway as i couldnt find it at Asda)
This dish is lovely and sweet and filling, my kids loved it smoshed up slightly with crusty bread.
I added curry pwder to it the next night and served with rice. yum All were free on a green day.

Yeah I really enjoyed it when I first did slimming world, have just dragged out all the old magazines I have to have a read through. Reason I am doing the countdown is for the pure reasoning that I am a skinflint and if I pay upfront I will want to get my moneys worth. I'm a size 24/26 at the minute, would love to be in a 22/24 for xmas, so we shall see.You never know how strong you are until being strong is the only choice you have.

Thanks Angie loves veg... the fishcakes were fab, I put in 28g parmesan so i could use my HEA, and they were really yummy especially with the curry powder. I made them into rissole shapes (minus curry powder) and my 16 month old and 3 year old scofffed the lot,:santa2::xmastree::santa2:0

Having a good day, had a massive sunday lunch with chicken as HB and syn 1 yorkie pudd and gravy. Had a lovely jacket pot with cottage cheese for dinner and just had a chocolate biccie at mums (synned of course). Into my 4th week now and still dead keen to keep it up, I generally lose the will to live by now, but keep telling myself that whatever I eat cant possibly tase as nice as being slimmer feels.
Also had a huge row with my DH tonight, about money of course (it does not help that he is giving up smoking atm!! ARGHH) which made me want to splurge on chocolate - but i have taken myself up here with a muller light and thought i'd have a look on here to inspire me.

Morning everyone :wave:
Despite arriving in work and my stress levels increasing by 1000% within 1 minute of arriving!, Im intending on having a good day after having a particulary bad week! (I weigh in tomorrow evening so not much chance to undo all the damage but you have to start somewhere :rolleyes: )
Breakfast is a Hi-fi bar (toffee and pecan) (have mislaid my stash of choc orange :mad: followed by m&s fruit salad that I have left over from the dine in for 2 deal).
Lunch will be home made soup
tea is home made burgers made with lean mince beef, paprika, black pepper, chili flakes, mixed herbs and diced onion. to be served with celeriac and possibly roasted veg.
pudding will be an aldi optifit yogurt if Im still hungry.
ive pretty much planned my week and am hoping to save some syns during the week so that I can have a home made pizza on saturday evening. the pizza base is 22 syns but with passata and mixed roasted veg on top, it should only be the pizza base I have to count with the cheese being counted as my healthy extra options. Im intending on having all green free veg on my pizza so that I can have two healthy extra choices of cheese. one of our members told me that the aldi be light cheese melts very well so I could have 84g of that for two HE options which will be more than enough.
It also occured to me this morning that I have some very small pitta breads in my freezer. these cant be many syns ? (will check and update this) so you could have really small pizzas which would be very yummyespecially if you again based everything on green free veg you could have pizza and chips
. Ive been to the wetherspoons pub quite a bit recently and although I have been very tempted to have their goumet burger and chips meal, I have been good and had the jacket potato option but have been thinking I would still have my burger and chips but make it very healthy.
Two questions though? I cant have blue cheese as a HE option? any ideas and how can I recreate onion rings????
On a final note, does anyone know how to count tiger bread? I buy this for my OH but always find myself eating it as well but I have no idea how bad the syn value is.0
