Having a good day today, Ive just finished using up my Halloween pumpkin i bought for £1.50 last week. At the beginning of the week I made Pumpkin Ghoulash that was free on Green, on the 2nd night I made it into a curry and had it with rice, also free on Green. I also had loads to freeze.
I just used the other half of my pumpkin and made Carrot, pumpkin and lentil soup also free on green and loads to freeze. These dishes were all really cheap and stuff my toddlers will happily eat also, so that makes life a whole lots easier.

Tonight I will be having the soup with 2 slices of nimble bread (HEB) and ive saved syns for a couple glasses of wine. and i may make SW chips to munch along with the wine so I dont feel like crisps

hope you are all having a nice weekend

hi - could you share the recipes? i have a pumpkin that needs using up

I've decided to give SW a go again. I joined in April but only stuck at the weekly meetings for a month as I found it hard to find the motivation to in the evenings after a long day at work. I also resented paying the money each time just to be weighed and hardly getting a chance to speak to the consultant.

After a week on the plan I've lost 2lb which is a good start, I'm aiming to lose half a stone by the beginning of December as thats when I hit the big 3-0!

Today I had a fried egg roll for breakfast (cooked in frylight of course)
BLT sandwich and cup of tea for lunch
Quorn spag bol for dinner and tonnes more tea.

Here's hoping the LBs continue to drop off, I would love to get below 10stone without having to be ill for a change (the only time I ever got below 10stone was when I had tonsilitis and I couldnt eat for a week!)

Hi the Pumpkin, carrot and lentil soup was -
    1 onion roughly chopped
    2 cloves garlic (crushed)
    4 medium carrots chopped
    1 1/2 medium pumpkin
    1-2 cups red lentils

I just sauteed the onion and garlic in frylite til clear added the chopped carrots and pumpkin, vecon and around 1 1/2 pints of water. Let cook for 15 mins then I added 2 cups of lentils, salt and pepper, let cook for 20 mins. leave to cool and blitz til smooth (you may have to adjust the amount of water you add, as I was leaving it thick as i add milk for the kids)

    the pumpkin Goulash -
    Frylite
    I onion roughly chopped
1 red pepper cut into chunks
    1 crushed clove of garlic
    2 tsp paprika
    1tsp carraway seed (optional)
375g Pumpkin or butternut squash (I put in 1/2 a pumpkin and added a bit more stock)
1 large carrot cut into chunks
    75g red lentils
    450ml stock made with vecon
    1 tin chopped toms
    1 tsp splenda
    salt and pepper

garnish with natural yoghurt and paprika

Spray a flame proof casserole dish with frylite add the onion and fry for 5 mins until lightly browned. Add the red pepper, garlic, paprika, carraway seed and stir for 1 min.
Add the pumpkin, carrot, lentils, stock, tin of toms, splenda, and salt and pepper.
Bring to the boil, cover and cook in a preheated oven, 180 c,(350 f) gas mark 4, for 1 hour.
Spoon Goulash into bowls top with yoghurt, paprika and carraway seeds. (i didnt use the carraway as i couldnt find it at Asda)

This dish is lovely and sweet and filling, my kids loved it smoshed up slightly with crusty bread.

I added curry pwder to it the next night and served with rice. yum All were free on a green day.

    hth

How about mixing it with tinned tuna or salmon to make fish cakes?
