Quick post before I have to go out (too early this morning yawn!).

Welcome to the newbies, it's lovely to see so many people enjoying SW and food optimising.

I agree with Kelly on the fat-free stock question - I see no reason why it wouls not be free. However 2cats1kid, as payment for answering your question, we expect the recipe for your yummy soup :D

It's around 16 weeks to Christmas folks (I know, I know) but with the finger extracted and a following wind, it's possible to lose between 1 and 2 stone healthily by then. Think how brilliant you'd look (and feel) and keep following the plan - it's well worth it to experience the results.
I let my mind wander and it never came back!

OK, I cook my chicken in the slow cooker, with no extra water, but you could easily boil up the bones for stock (can you tell my heart is in the old-style forum LOL). I strain off all the liquid at the bottom of the crockpot at the end, allow it to cool and then pop it in the fridge overnight. This is a mixture of stock and chicken fat at this stage.

In the morning, all the fat will be a white sludge on the top, and the stock will be a jelly layer on the bottom. Actually, it's worth doing, just to show yourself how much fat is in one little chicken - ugh!

I add some water back to the stock and to this I add a grated carrot, either rice or pearl barley (is barley free on green? This is where my SW approximation kicks in - I kind of assume that something like that probably is, and go for it, rather than check the fine print LOL, but it works for me), and a finely chopped onion, and season to taste (it does need a fair bit of seasoning).

You could stop right there, but I also add in some chicken scraps from the (by now totally stripped!) carcass, and I like to top it with fresh parsley from the garden as that gives it that lovely fresh taste.

It is so simple and so delicious!
  • Talking of Christmas, do any of you have targets for Xmas?

My target is to have lost 4 stone by then.

    The Laughing Cow cheese triangles

I know you can have 6 extra light or 5 light as a healthy extra.

How many can you have of the normal ones? Book says they are 2.5 syns each...so can I have two.. as a HE is roughly 6 syns?

    TIA

I don't really have a Christmas target, but I'd like to have lost my stone and a half for going on holiday next Easter. So that's 21lbs in about 30 weeks - should be doable, even with my slightly suspect way of doing things!
  • Well done to all the losers! :A

I have my WI tonight, last week I put on a pound of the initial 2.5lb I’d lost so I’m determined to lose it plus more tonight.

Having a light lunch of Tesco Healthy Living Carrot & Coriander Soup and a Muller Light, I’ll be ravenous by 5.35pm!!

Christmas target is to be at target, 2 stone in 3 months...should be doable! I just need to stop being so naughty on a weekend!
