The best rices to use for risotto are arborio or carnoroli - they release a starch as they are cooked, creating the characteristic sauce, whilst keeping a little 'bite' in the centre.
If you have long grain or basmati rices, you are better looking for a method that oven bakes - it won't be risotto, but it will probably be a very tasty, similar alternative. Alternatively, use them in an indian biriani where they are perfect.

You could probably use pudding rice as this is a runny rice too.Risotto rices release more starch than others which is why it is used in the way it is.I have tried making risotto with regular long grain rice and although it tastes ok,it's really not the same!I would go the extra mile and get the correct rice for the job.:T:jHalf a stone off,only another 2 to go!:j:T:D;)Cats are truly evil,like women....;):D:p

Need you all to keep fingers crossed for me today girls, got my WI at 6pm instead of my usual 10am as it's Bank holiday and I really, really want that 3 stone sticker tonight!

Good luck TG - stay focussed today, and I'm sure you can do it. I usually weigh in at 6pm (on a tuesday), and try not to eat/drink anything after 4pm. I find that helps - for some reason I always fancy a cuppa about 5pm though and have to resist!
I am seeking a miracle for toomorrow though - NOT been a great weekend (dietwise) - don't get me wrong, I have made really good decisions, and things could have been oh so much worse, but with 3 restaurant meals and a picnic:eek: under my belt (literally), even the best choices were destined to have a little oil (etc etc) out of my control.
so today - Breakfast was a huge chunk of melon - lunch - chicken if I can get some from the shops! Those speed foods are gonna have to pay their way today!!0 -
