:hello: I've planned a chicken salad for dinner later (no roast as OH not back til late and its too much hassle) but it sounds boring. I have some chicken breasts defrosting, but what can I do with them? I was thinking of stufing them with some quark (garlic or plain?) and wrapping them with bacon - would this work? I think someone like peachyest doesn somehting like this but I can't remember!

I often do this, but using dairylea triangles instead, as i find quark too sharp.
For salad chicken...
Sometimes, I drizzle fresh lime juice over the chicken before I grill on the george foreman..if you slice the chicken breast almost in half and open it up, it grills better i find, I think they call that "butterfly" chicken.
hmm, what else do i do...ah, spinkle some lemon pepper on the chicken breast before cooking?
do you like tandoori style chicken in a salad? There is a recipe in the red free recipe book.

Do you have peppers? There is a chicken with peppers "featured recipe" on the website which looks quite nice, altho i suppose it doesn't matter if you haven't got skewers.
Today, I am trying out the chocolate souffles that are in the new magazine. My two boys keeps moaning, "when is it ready mummy?" It takes 4 hours to set. Hopefully worth the wait.0 -
I've got red pepper in the freezer. I'll probably pop out tomorrow anyhow - I need eggs (though if I eat any more I'll look like one)
