Mine are more like wedges. Leave skins on and microwave them for a minute or two less than you would if you were doing jackets. Spray a baking sheet with olive oil, cut spuds into wedges, spray these with oil and cook in oven (about 200degrees) until they are golden brown. much healthier, cheeper and tastier than oven chips0

My method is much like vivw's but the secret to getting the chips nice and 'like-fried' crispy is to let them cool down and dry for about 10 minutes after you parboil them and before you put the oil on. wouldn't eat anything else now - shop bought oven chips taste so floury.0

instead of HM oven chips, I do potato wedges (mostly cos you don't need to peel them
) Cut each potato lengthways into 8, toss in a bowl with a splash of oil and some cajun seasoning (or whatever you have - even just chilli powder or garlic salt) then bake in the oven for 25-30 minutes until crispy & cooked through. Turn once.
On the rare occasion we have "proper" chips, I don't par boil & double dip, so deep fry until cooked then remove & allow the oil to heat back up before dunking again to crisp up.0 -

thanks...I forgot to mention that bit. Even OH eats them and he is extremely fussyWe don't need to do it perfectly - good enough is exactly that GOOD ENOUGH.0 -

Hi all,
Has anyone got a fool proof 'dummies guide' to making home made chips.
I dont have a deep fat fryer but do have a large pan i can use.
I have tried all sorts of methods since i have been married with varied results but non anywhere near perfect.
We dont have chips very often, probably only once a month, but when we do i would really like them to taste nice (or at least half way edible) :rotfl: .
