    I got a chip pan basket in Morrisons for 99p. I use a saucepan and the basket. It works fine.

    I always double cook my chips. Easy peasy and they're delicious. My grandkids say they're better than the fish shop!

    I bought a deep fat fryer on Sunday, cut up the potatoes, left to soak in cold water for 1/2 hour, dried them thoroughly then fried in sun flower oil, absolutely fan dabby dozy. P.S. used Maris Piper pots.

  • not sure if it has been said but if the fat is not hot enough they will soak up the fat hence the going soggy, break up some bread and put a piece in when this has gone brown and is floating at the top then its hot enough. Also when the chips and ready they will be floating at the top.

    If you reuse the oil, the more times it is used, the more hydrogenated it will become. I only make chips for Boxing Day and birthdays and I use fresh oil each time for this reason.

    Also NEVER reuse oil that parsnips have been fried in - it's vile.

  • hi any1 know the secrets to perfect chipshop chips? im trying to cut down temptation of getting takeaway!!

    and what about preserving them if i was to prepare a big batch?

    Hi,if i'm making a large quanity then i usually cook them twice, 1st time at a lower temperature 160c, then you can leave these till you need them,
    then fry at a hotter temp 180c ish till crisp and golden,these won't take long
    and you can keep them warm in a medium oven
