'proper' chips!! argh!

    I never par boil the chips, just put them in a bowl toss in a couple of desert spoons of olive oil and put of heated baking tray on about 200c for 30 mins - turning during cooking time. They come out lovely.

    I did used to just put them of a tray with the oil on but by tossing them in the oil they come out much nicer - and dont taste plastic live bought oven chips. I usually crack a bit of salt and pepper on too. LOVELY!!!

    My ex used to live with a nigerian and he had a nice idea for chips which go very well with curry (I had them last night for the first time myself!)

    Take a yellowish plantain, cut like a banana (after peeling!) but maximising the length using a slanting cut. Dip into flour and shallow fry until cripsy brown = ) flip and when brown on all sides *drool*

    I used to buy a big bag of spuds, sort out the small potatoes and chop them up into chips. Par boil, drain, bounce in the pan to fluff a little, then stick them in plastic bags and into the freezer.

    Take out as needed, a tablespoon or two of oil on a baking tray and hey presto, oven wedges = ) sprinkle with cajun seasoning for a nice flavour!

    You don't need to par boil fresh potato, just cut into wedges, spready with oil and stick in the oven. Cut thinner for crispier wedges.

  • Oh yummy, I'm going to make some homemade chips with our meal tonight. It has been years since I've made them so I hope they turn out ok. Will try the double cook as I never tried them that way

  • Proper chips need to be fried twice!

    Chip spuds and put in med/hot oil for about 5 mins, then take them out a drain off excess fat....put fryer on high then when very very hot, put chips back in for 2-3 mins and this will crisp them up...like from the chip shop.

    LOL....me too. God the smell just doesnt leave does it??? I could go to work with lovely washed hair and by quitting time it was rank with oil - YUCK!

  • They turned out just perfect ( double fried them) - I'd forggoten how proper chips tasted. Won't be using them frozen chips - well might do for emergencys

  • hi all dont know if this is the place to post this but here goes

    about to cook dinner for me and oh Fresh fish with home made chips and pees

    i usually cut the potatoes then put them into the deep fat fryer.. but i havent got any oil and really cant be bothered to go out and get some!!!

    forgive me but im new to this cooking from scratch business is there any other way i can cook them?
