Heston says freezer is best to keep them drying out, but par boil them first, then chill and then fry twice at 130 then 170/180, done this a few times over the last year and are great0

As your thread has now dropped down the board I've added it to our main thread on making homemade chips where there are lots of tips and advice that should help.

Best chips if you want the REALLY old fashion taste which CANNOT be bettered is by using that forgotten word - LARD.
Flavour like you've forgotten and to hell with the following health critics:)
Here's a worse word for you - DRIPPING! my mum always said that the best chips were fried in dripping.
failing that - then lard does make a lovely chip!
but in the interests of my arteries - I use sunflower oil!0
