'proper' chips!! argh!

    I chip the potatoes, rinse them and put a little olive oil in a bowl and toss them round in it to get good coverage (in two or more stages if need be) then cook at around 200 degrees fro 25 minutes on a teflon baking sheet or lightly oil tray.

    Its great to chop your potatoes up (leave skins on, much healthier), put in a bowl with oil. Then, add any of the following that you like:

    - herbs, i.e. rosemary, thyme work well
    - garlic
    - chilli powder
    - pepper

    Add salt if you like it, but I've weaned myself off and actually prefer it without.

    You can also, for some variation, add in chunks of other root veg, i.e. swede, sweet potato, squash, courgette (but don't put the courgettes in till about 10 mins before the end or they'll overcook), carrots etc.

    Deeeeeeelicious.

    To speed up the baking time required, par boil or microwave a bit first, or just chop into smaller pieces. But I prefer them cooked without parboiling first, seem to come out crispier.

    Remember to turn them all over half way through cooking.

    Another tip - I use a baking tray with little holes in it, which is supposed to make things like chips and pastry crisper, it works too. Mine was from Lakeland, but I've seen them in supermarkets too.

    oh i am gonna try the slimming world method. when i make HM chips i'm sorry to say but i always put them in the deep fat fryer. and although they are scrummy. it does make me think baout how un healthy they are. but nothing beats HM chips imo.

    :D I'm always on a bloomin diet so I chop mine, parboil them, spray with oil then bake in oven at 230 for about 25 mins. No i know its not the same but not bad for a diet !

    are you rinsing the starch off first, then drying them, oil has to be hot so dont fill the pan too much or it will boil over when you put in the chips

    Twinks right you must wash first to get rid of all the starch, then do first fry, take out when just soft, I sometimes give a bit of a shake to roughen the edges, ensure oil is up to heat again then fry again till crispy, it might be worth doing second frying in two smaller batches to get realy crispy chips, you can fry off all the chips first then put aside it dosent matter if they go cold as most cafes do it this way, then fry smaller batches for second stage, my local chippy mixes a it of batter with the chips this makes them super crispy! i habvet tried it at home tho
