Try popping them into suitable shaped shallow greased oven proof dish and topping with a crunchy top (say bread/herb/cheese blended mix) sprinkle lightly with (olive) oil and cook for 20 - 25 mins at 200C (15-20 mins if the fish is already thawed)

    That sounds good.

I've never really ventured into cooking fish as I'm not keen on it myself, however I've a 8 month old baby and would like to get her into fish early on. My question is how to cook fish of any kind? I could cook, say, a fillet of cod and flake part of it for her and give hubby the rest but I'm also not sure about re-heating etc as he comes home late from work once baby is in bed!
Any fishy advice very much appreciated - maybe I'll be converted too! :-)
    Thanks in advance

I tend to do white fish (mostly haddock up here in Scotland) in my steamer and then serve with a white or cheese sauce. I am sure if you reheated thoroughly would be OK for hubby. Alternative would be to cut off enough for your DD and poach until cooked in some baby milk. Flake the fish and serve with whatever vegs you are giving her and use the poaching milk to moisten finished meal for her. Cook remainder of fish for your OH. If your DD likes fish, why not steam or poach a whole fillet and then split into portions for the freezer.

Very easy and versatile - just don't overcook it. Thick fish like salmon, haddock, cod will steam well (about 10 mins, 15 if frozen), bake with a little oil in foil (say 15-20 mins), fry or griddle. Fillets on a greased pan topped with cheese/breadcrumb/herb mix or whatever you fancy is an easy method and looks like it took a lot of effort. Whole fish (herring, mackeral, trout) are easier still - just slash the sides (except the trout) and grill - they do need to be really fresh to taste at their best, bright eyes, red gills when you buy them. Salmon of course can be cooked and then eaten cold with salad, new pots, mayonaise or whatever - I could ramble on but will leave it at that for now!

You can also bake fish. I usually do salmon and trout this way. Use a piece of foil for each fish and squirt it with 1 Cal and Lemon Juice, wrap the fish up in this and bake in a moderate oven for about 20min.

Obviously to be OS I fill the oven with pud and/or cakes to get the most of its use lol

    Mortgage-free Glee!
    My ideas:
    • Salmon - for grown ups, mix breadcrumbs, dried herbs, juice and rind of a small lemon and then top cutlets and put in oven for 20-30 minutes (depending on size). For baby (or if you are in a rush), omit the breadcrumbs and just microwave the salmon to cook (2-3 minutes usually). I also serve salmon with a lemon or parsley sauce.
    • Dover sole - really a treat, I start by pan frying the whole fish to add a lovely colour and then putting it in the oven to finish for 20 minutes or so. Baby can just have some flaked with mash (removing bones), etc.
    • White fish - again, can be microwaved like salmon and served with a sauce (plate up for OH and microwave when he gets home)
    • Mixed fish - cook fish in some milk and use the milk to make a lovely white sauce, add peas and sweetcorn and flake fish into sauce (removing any bones). Put in the bottom of an ovenproof dish and top with mashed potato. Baby can eat this fine. Can be reheated in microwave for OH.
    • Trout/haddock - wrap in foil, adding some lemon juice or white wine and cook in the oven for 15-20 minutes.
    • Trout - another treat - stuff cavity with herby cream cheese and wrap in bacon and oven bake for 20 minutes.
    • Smoked haddock - be sure to buy the undyed version as it lessens the additives. Easy to cook - just microwave to warm through and serve topped with some butter. Apparently, I loved this as a child.
:D Thanks to MSE, I am mortgage free!:D

i cook pretty much all my fish in the microwave. I mostly eat salmon and haddock. When i used to cook fish for my son, i used to cut off however much he would eat and cook it, then cook ours later.

Place fillet in a pyrex bowl with the lid on, cook for 30seconds at a time, for salmon the colour will change to a much paler pink and will flake off when you prod it with a fork. For haddock and white fish it will flake easily too. Make sure fish is piping hot as well. I find this method worked for my son because the fish didn't dry out. Hope that helps x
