We like a lot of Salmon - we buy at the moment Frozen Salmon Pieces from LIDL in the Freezer section from memory you get 2 decent sized portions for 2.19
We always do in the microwave (covered) for 4 mins - plenty of time.:j

I saw some Sole on offer in tesco, it was too good to miss. Now I need to find a good receipe to use it in.

I would love to get some receipes that would make the best of this fish.

Please, it would be great to get your advice.

There's a thread here on cooking fish. You may also want to look at the recipe index.

I would cook what's needed each time for fish, it cooks so quickly and spoils so easily.

I've come to the conclusion that with good fish, you need mess around very little, plain grilled or fried is sufficient.

    Ditto purpleivy.

Just coat the fish lightly with flour and gently fry on a medium heat . Check the fish when you think it is still underdone: sole is not at its best when overcooked.

Have a look on deliaonline.com, or the uktv food websites if you need more ideas.

I like sole plain as it has such a delicate flavour.

Agree, keep it as simple as possible and above all, don't overcook.
My mother used to bake sole in the oven, in some real butter, for about 10 minutes till just turned opaque, and serve with a few slices of lemon. Delicious!

How about topping the (defrosted) fish with chopped (skinned and de-seeded fresh) tomatoes, mushrooms, breadcrumbs, garlic and herbs and baking in a foil parcel with a dash of white wine or lemon juice and served with those fab little garlicky rosemary flavoured roasted cubes of potato and maybe some green beans?
