    Quick question folks. Am doing up the packed lunches for the week. Got reduced tinned corned beef. It's yummy, just had some!

    Am I right in thinking it would freeze ok in sandwiches?

    I bought a vacuum packed piece of parma ham in late summer (I think it was from Lidl and about £12.99) I thought the use by date was in January, but I must have misread it as I have just looked at it, when tidying the bottom of my fridge, where it has lived since I bought it, and the use by date is 23 November.

    I had been planning to use it over Christmas - it will take a few weeks to use up though. So would you

    - freeze it now, vacuum packed
    - open it, start using it, and freeze some slices separately
    - or something else?

    All ideas welcome, thank you.

  • Hello!

    I regularly 'forget' things in my fridge - so I have experience of this.

    If this is a solid chunk of cured ham, with an unbroken seal you are probably OK just waiting until Christmas. I think it will be fine. If you want to be supersafe, freeze it entirely, defrost when you want to use it and you probably won't notice the difference.

    But do not open it - it starts to deteriorate pretty quick from there. And don't freeze slices if you have the option of freezing a chunk of ham. In my experience it dries up no matter how well I have wrapped it. Makes it only good for cooking. (But that might be your plan.....)

  • If it is still sealed and completely vacuumed you will be fine. because of the way it is cured, if you want to wait until xmas there should be no probs. But as Macadamia said, if you want to be completely safe bung it in the freezer :)
    I have enough money to last me the rest of my life......until I go and buy something!

    Thanks - it is still sealed up - so I will just wait until I have a good reason to use it - probably on the run up to Christmas :-)

  • Hi

    I have had pork sausages in the freezer since September...can I cook them from frozen? It says on the packet best cook from chilled...thank you
  • I always cook sausage straight from the freezer, never thought to look at the instructions on the packs I just assumed all sausage can be cooked from frozen.
    I would say just cook them, aslong as they are cooked throughly they should be ok.
