I made a huge one, but their is only 2 of us and a 4 year old, as well as family were meant to come round for dinner and had to cancel so got loads left will try and eat it tonight instead of our pineapple cake-which i can slice up for oh and sons pack up tomorrow.Ds2 born 3/4/12 8lbs 8.5:j

Just finished making my first ever batch of home made crumpets, they taste amazing and I'm never buying another supermarket crumpet again! :j
IF there's any left after breakfast tomorrow, what the best way of freezing them? Would they be ok just in an airtight bag or would they need separating with baking paper?
(Did a search and couldn't find anything)

I'm not sure re. freezing them, but I imagine they might stick together, a bit like bread rolls or slices of bread (?) so maybe freeze them seperately or decide how many you would want to defrost at a time and put that amount into a freezer bag?0 -
To stop them sticking together, freeze on a tray initially (an hour or two) then stick in a bag together, they shouldn't stick together so you can grab one out at a time if needed.0

I freeze crumpets all the time. They do stick together, but a 30 second blast in the microwave usually separates them without defrosting, so you can put some back.I Believe in saving money!!!:T

Got the recipe from Gary Rhodes' Great British Classics book (great book BTW) I've seen a few recipes about but this looks simpler with less ingredients. I couldn't find the exact one to link to so here the adaped one I did using dried yeast - they aren't the quickest thing to make but so worth it!
Makes approx 20 but only made 10 for me, probably made them too big!
450g (1lb) plain flour
15g (1/2oz) salt
2 tsp (about 7g) dried yeast
600ml (1pt) warm water
Sieve flour and salt.
Mix in yeast
Whisk in most of water I used all of it as it seemed pretty thick
Cover and leave in warm place until mixture has risen Bit ambiguous this but but I left it for about 45 mins
Check consistency, add more warm water if it seems thick - leave for 8-10 mins Didnt bother with this, seemed ok
Warm a non-stick frying pan on low heat
Grease some crumpet rings* and rub pan with butter I put butter in pan but it burnt after first few times so left that bit, non-stick worked enough
Place crumpet rings into pan and add batter until half full easy to overdo this as they rise well!
Cook on low heat until holes appear and top starts to go dry, the rings can be removed and crumpets turned over to brown the top for about a minute
*I bought crumpet rings a bit ago from Sainsburys after a fruitless search elsewhere, there were two in a pack but last time I went they were half price - d'oh! Going to get some more if they're still half price as it will be much quicker to make a batch! HTH

Funnily enough, I made home made crumpets the other day, and they were yummy but I was looking for a different recipe to try, so will be trying yours!
I bought some egg rings in Wilkos the other week to use and they were perfect. They were 2 for £3, normal price, so I don't know if that works out cheaper than Sainsburys if they are not half price anymore when you go back?0 -
