    Hi guys,

    I bought some whoopsie fresh chillies and usually I dry them and put them into a mill and use for stir fries etc.

    However my mill is currently full. Also for making things like goulash it is better to have "fresh" chillies (also you know how much you are using).

    Can I chop them up and freeze them instead? Anyone actually tried it? Are they more/less potent after or something?

    I think you might be better off freezing your chillies whole as they could tend to get frostbitten rather quickly in a chopped state. The other thing you can try doing with them, which we do a lot with surplus chillies, is to cook them down into a chilli sauce. We find that this can be kept almost indefinitely in a bottle or jar in the fridge and a teaspoonful or whateve can just put into any recipe when needed. We haven't noticed any deterioration in the flavour/potency using them in this way.

    Is there jelly in the trifle? My experience is that jelly can't cope with being defrosted and just goes liquid.

    Birthday cake is probably fine - unless it's iced (butter cream seems to be ok though)

    As already said jelly will not freeze but you could take off the custard and cream as that will.

    You can freeze the cake, no problems, but the jelly won't, it will keep for a few days though.
