    I always freeze courgettes, mushrooms, broccolli, cauli and peppers without blanching them and have never had any problems

    DON'T freeze uncooked potato, it will go grey/black. Most other veg will be ok but won't keep nearly as long (best under a month) because blanching kills of some bacteria that decay the veg and also alters the cells in some scientific way! It depends on the structure and water content of the veg as to how well each one responds to freezing and how long it will last. There is a whole section in the indexed collections on freezing.

    Thanks for your responses, I've got loads of meat off the chicken! Freezer space is a little tight so it's easier to freeze just the meat. Am going to try and make some stock with the carcass as well, as I'll be using the pressure cooker for tea tonight :-)

    you can freeze most veg without blanching - but I dont recommend it! blanching kills off any germs and also helps to wash off any fertilizer etc used on the veg. it also helps to set the colour. er - it also kills off any creepy crawlies you may not have noticed inhabiting the veg (especialy if the veg from garden or allotment).

    Well - I did so for the first time the other day - and it came out fine. Maybe it was very marginally mushier than it would have been - but it was that or lose it to going mouldy - and it was fine.

    I've got a huge watermelon now and the plan is to de-skin it, chop it into chunks and freeze most of it.
