Just wanna give PurplePrincess a huge thank you for the receipy for the scotch pancakes, made some for our lunch today and they are absolutely gorgeous.100% better than shop bought ones.

I was surprised how fast they cook, much faster than the flat pancakes, just gotta watch the heat as they can easily burn.

Pancake day shouldn`t be a once a year event, should be weekly and classed as a bank holiday too!

Just spotted your post hazzie, really pleased they worked for you :j

They're not just for one day in Scotland - make great supper, teatime or weekend breakfasts too!

If we've got children round I usually put butter, jam etc on the table, make up a huge batch of mix and keep sending them through as I'm cooking. They all think it's a real treat and one lad always asks when I'll be making pancakes again! :D
